I don’t really measure any of the ingredients. Just use how much or how little you want. You can also omit any of the veggies you don’t like or add any others you do!
- 4 egg whites (or 1 whole egg + 2 egg whites)
- Mrs. Dash seasoning; any flavor
- Bell Peppers; chopped
- Onion; chopped
- Baby Spinach
- Deli Turkey or Ham; chopped
- Olives; sliced
- Feta Cheese
- Salsa
Spray a pan with a little olive oil and heat on top of the stove.
Add peppers, onions and spinach.
Saute for a minute or 2, until the spinach wilts…
like so. 😉
While the “stuff” in sauteing, beat 4 egg whites with a fork.
Add Mrs. Dash, sliced olives and chopped ham/turkey.
Add the egg mixture to the sauteed veggies.
Cooked it until it is set on one side. Flip it over and add a little feta cheese (yum!) Cook until the other side is done!
Top with salsa (or whatever you prefer) and serve with a side of fruit.
