We’ve had the most perfect fall weather this past week and I’ve loved it SO MUCH! It’s been sunny, in the 60s and absolutely beautiful.
Love it.
But, we’re expecting snow this weekend. Dang.
Anyway, since I’ve been feeling the “fall spirit”, I decided to make some Pumpkin Protein Pancakes for breakfast this morning.

There’s something about pumpkin that makes fall, well uh….a little more “fall-y.” I love it. These tasted so good to me and are so filling! Love them.
I also made a triple batch (wanted to use up all the pumpkin!), so I have a bunch leftover in the freezer. Love that.

Well, I went to my crazy class at the gym yesterday and I loved it!
However, I’ve decided that class seriously stresses me out!
I drop my son off at school 10 minutes early, drive like a bat outta heck to get there (a very responsible and safe bat), rush like mad to get my two littlest ones to the gym daycare and then hope there’s still room in the class for me.
Yes, I go to that class to improve my health, but I think the process of getting there takes 10 years off my life!
When I got to class yesterday, there were NO benches left and all the barbells were taken! I also had to got to use 15 pound dumbbells because that’s all that was left.
Ya.
But, I did manage to find a very cruddy and beat up bench hidden in the corner. Thank heaven for small favors!
It was a fabulous class and I’m definitely feeling it in my legs today because we absolutely killed the lower body. Yay. Oh, and I counted how many people were in the class and there were 77!
Yes. SeVeNtY SeVeN!
Most of the other classes I go to have 20-25 people in them.
77 is absolutely insane.
But, that’s why I sacrifice years off of my life to get there…it’s an amazing class!
On the way home from the gym I enjoyed a yummy Raspberry Chobani yogurt…
I’ve decided Greek yogurt is the perfect post-workout snack. AND, Chobani Raspberry is my favorite! YUM! I love this new blended variety too (no need to stir.) This yogurt has 120 calories, 17 carbs and 13 grams of protein.
Perfect.
It’s really important to eat something containing protein and healthy carbs as soon as possible after a workout. It really helps the body to recover and the muscles to rebuild. I’ve also heard it’s ideal to eat within 15 minutes of working out.
Yogurt is great, but things like protein shakes, chocolate milk, fruit with nuts/nut butters, healthy protein bars, cottage cheese with fruit, string cheese with whole grain crackers, etc. are all good choices too.
Speaking of healthy post-workout snacks, I recently received a bunch of Perfectly Simple Protein bars (made by Zone Perfect) and they are wonderful!
They have four flavors; Toasted Coconut, Oatmeal Chocolate Chip, Cranberry Almond and Peanut Crunch. I can honestly say I love all of the flavors.
When I heard the name, Perfectly Simple, I knew I would like them. There are SO MANY protein bars out there with unpronounceable, chemical-ish, frankenfood-type ingredients that are really scary.
The ingredient list on these Perfectly Simple bars is really simple and refreshing.
Each of the bars contain 10 grams of protein and are between 170-200 calories. They are a wonderful thing to eat right after a workout or would also make the perfect afternoon snack, when a sweet craving hits.
I thought the Oatmeal Chocolate Chip one tasted like a Quaker granola bar, only more dense and filling. The Cranberry Almond and Peanut Crunch ones tasted so good too, but I think the Toasted Coconut one was my fav! It tasted just like a coconut macaroon!
Loved it. I’m definitely going to stash a few of these in my purse.

I have some funny pictures to share with you guys. My daughter went to a cute church program last night and came home with this cool Secret Agent type badge.
When her 5 year old brother saw it, he thought it was the coolest thing ever.
Let me just add that my 5 year old is the biggest superhero fan you’ll ever find! He pretends he’s a super hero pretty much every day.
Soooo, my daughter (being the great sister she is), took a bunch of pictures of my son dressed up as a “Secret Agent” (in his mismatched jammies, lol!)
I think he looks more like an Al Qaeda Operative. 😉
She then put his picture in with the Secret Agent badge, gave it to him and he was a very happy camper.
Too funny. It looks like I have a 5 year old delinquent child now.
