I have exciting news! I’ve been working on my microwave mug cake recipe the past couple of days and I’m so happy to say…..I have finally perfected it! Yay!
I have a couple other microwave chocolate cake recipes on my blog and they are decent, but not awesome. I knew there had to be a way to make a healthy microwave chocolate cake taste really good, so I kept tweaking and tweaking the recipe until it FINALLY tasted like CHOCOLATE CAKE!
Here’s my chicken scratch recipe…
It doesn’t taste like healthy chocolate cake either….it’s tastes just like chocolate cake!
Eeeee! It’s so exciting, I know! This recipe is definitely a diet saver!
The Best Healthy Microwave Chocolate Mug Cake Around!
- 1 egg
- 1/4 cup pumpkin (can also sub applesauce)
- 2 tablespoons healthy flour (oat, spelt, whole wheat, etc.)
- 1 tablespoon + 2 teaspoons sweetener (Truvia, Splenda, sugar, etc.)
- 1 tablespoon + 1 teaspoon cocoa
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1/4 teaspoon vanilla
- 1 teaspoon milk of your choice (I used unsweetened almond milk)
- 1 tablespoon dark chocolate chips (optional, but highly recommended!)
All the ingredients I used…
Spray a microwave safe mug or small dish with cooking spray.
Put all ingredients into the mug or dish.
Mix very well with a fork or small whisk (you don’t want chunks of egg or pumpkin in there!)
Cook in microwave for 2 minutes.
Top it with your favorite topping (peanut butter, whipped topping, fruit, etc.) or you can enjoy it plain!
You can eat it right out of the mug, or put it on a plate.
Have I told you how yummy this is???!???

That’s it! Healthy, YUMMY, chocolate cake in a mug that takes about 3-4 minutes to make from start to finish!!

Nutritional Information: Only 177 calories for this baby! It’s filling too! Note: I calculated this without including the chocolate chips. 1 tablespoon dark chocolate chips add 70 calories, 5 grams of fat and 6 grams of sugar.
**I just want to mention that the chocolate chips really add A LOT to this recipe! It’s very good without them, but when the chocolate chips are included it tastes so decadent. Love it!**

Melanie, I made your mug cake tonight and it was scrumptious! I used applesauce and a little pecan butter instead of the egg since I’m vegan. It was delicious!! Thank you for sharing! I’ll be eating it often 🙂 Oh and yes, molasses makes the chocolate taste even more chocolatey! More along the lines of dark chocolate. So decadent!

This post just made my day. At last, I find a reasonably straight forward recipe for a Paleo compatible chocolate cake… WOOT!!!
I needed to use banana instead of pumpkin, honey as a sweetener, and a slightly longer time for my slow micro-nuker. Tasted great. Awesome recipe, thanks for sharing the mug cake. 🙂

I have to admit, at first while this was cooking in the microwave, I thought this is not going to be good ( it was bubbling up and steaming lol). But oh was I wrong! I added a few chocolate chips to the batter before cooking, which went to the bottom during cooking, so when I turned it over on to a plate after it was done it was like a chocolate lava topping, I added some fat free whip topping on top and this was so delicious. try playing with pureed black beans instead of the pumpkin for a little variety. This adds a nice amount of protein to your cake. I love this idea of microwave mug cakes! Very cool.

I’ve made alot of chocolate microwave cakes with stevia in an effort to reduce my sugar intake but still allow myself a treat. This was the best microwave cake recipe I’ve tried so far. I used sweet potato jarred baby food instead of pumpkin. I also replaced a tablespoon of flour with chia seeds. I added in a teaspoon of coconut oil because I like the coconut flavor. Yes, regular sugar would work fine. I imagine you could use honey too, but you might need to add a bit more flour.

Yes, but the yolk seems to add a little more flavor and texture. I’m sure the egg beaters would work though. 😉

When I read this recipe I wanted to make it immediately, but since we don’t use microwave, I managed to pour this in cookie molds and bake them in a owen. It turn out great! I can’t tell how long they were baking because my little girl managed to turn off the oven so I spend 1 hour until they were done, but I think that around 30 min. 180C will be enough.

My biggest weakness Is chocolate, My second biggest weakness Is mug cake, if I had my way I would be making 3 mug brownie everyday lol, but they range around 400 calories and I just can’t do that to myself. So I would just like to thank you so very much for sharing your wonderful creation!

I just made this — it is divine with the pumpkin! Used 1 Tsp coconut flour and 1 Tsp whole wheat flour and Splenda. I had tried chocolate mug cakes with applesauce before and they were too spongy, the pumpkin makes it really smooth. It’s perfect!! Thanks so much for this recipe!

Pretty good. Considering the ingredients list, this is about as close to chocolate cake as you can get. It’s a bit spongy, but overall very moist and pleasant.
It’s really quite filling, so you’d probably only want half for dessert. I really like how wholesome the cake is – it’d make a great breakfast.

I’d like to follow up on my original comment. I originally made the cake in a microwave. However, this cake is super delicious when cooked like a pancake on the stovetop, and I’ve made this recipe countless times.
Cooking it in a bit of butter and adding the chocolate chips makes the cake taste super decadent. I also found that the cake cooks more evenly on the stovetop and crisps up very nicely. Thank you so much for coming up with the recipe – it’s brilliant! 🙂
