I can’t believe Thanksgiving is next week! Seriously, it seems the older I get, the quicker time flies. I feel like summer was just last week and my kids just started school….and here we are heading into the Christmas season!
Whaaaat?
It’s seriously nuts.
I love this time of year! I love the coziness of the season, the beauty of the holidays and all of the precious memories associated with this time of year.
I spent a little bit of time on Pinterest a few days ago and I found so many fun Thanksgiving recipes that I thought I would share with you today!
These are just things that jumped out at me or that seemed unique, yummy, beautiful, fun or just cute. Soooooo, here ya go!
I saw this darling Thanksgiving Turkey Veggie Tray and I thought it was just the cutest thing ever….
This would be such a fun way to bring the “Thanksgiving vibe” and to encourage the kids (and everyone else!) to eat more veggies! Seeing this turkey actually made me start to crave veggies and dip. 😉
This Eggplant and Zucchini Gratin by Julia Child looked so beautiful, unique and yummy to me!
I love that this recipe is different, I love that it’s healthy and I love that it brings all the fall colors! Love it!
Sweet Potato Casserole is one of my very favorite Thanksgiving side dishes. I searched for a healthier recipe, that still looked yummy and this one (from Confessions of a Fit Foodie) looked awesome!
I love that it includes sweet potatoes and butternut squash and I love that it doesn’t have loads of sugar in it, but it still has some sugar to make it taste good! I also love that the recipe seems very simple.
I’m a sucker for deviled eggs, so when I saw this recipe for “The Best” deviled eggs, I was intrigued.
Deviled eggs are an awesome Thanksgiving side dish and I love that they are kinda healthy too! This recipe looks simple and so good.
AND, if you want to be a little “extra,” you could make them pretty and festive and turn them into pumpkins, like this….
I came across a bunch of cute pumpkin deviled egg pictures and recipes out there, BUT most of the recipes I found seemed weird to me!?
They seemed overly complicated and some even included actual pumpkin in them (ewwww!) I would be tempted to just make regular deviled eggs, but give them an extra shake of paprika to make them more orange, draw some pumpkin lines on them with a toothpick, add a cute little stem and call it good!
Ummmm, I loved these darling, yummy looking Chocolate Apple Turkeys!
Aren’t they they cutest!? I know kids would love them and I think adults would love them too! I also love that they bring a fun Thanksgiving feel as well.
I’d be tempted to actually dip them in caramel and then drizzle them with chocolate. Would that look dumb? I dunno, but I think they would be yummier!
I thought this Apple Walnut Quinoa Salad looked so dang friggin’ good!
A salad is always a good, healthy Thanksgiving side dish and I love that this one is pretty, festive, a little different and looks so yummy!
I think I would sub pecans for the walnuts because I love them so much more. I would also probably sub feta or Gorgonzola cheese for the goat cheese too. Yummy!
I thought these little fruit cornucopias were so darn cute and such a fun side dish for the kids!
They seem so simple and easy to make and I just think they are the cutest.
I also thought these Crispy Roasted Green Beans looked ahhhhhmazing!
I love that it’s another wonderful, easy and healthy side dish! The recipe is very quick and easy and it looks so yummy to me!
Okay, I thought I would also share one of my own favorite Thanksgiving recipes! It’s for The Best Rolls Ever and they really are the best!
I got this recipe years ago at a church conference, so it’s not “my own” recipe, but I don’t know where the original recipe actually came from.
It’s so good and my mom always has me make them whenever we have Thanksgiving dinner at her house. I also like to make them just for regular dinner sometimes or I like to bring them to friends when I bring in dinner after a baby is born or for other reasons.
Yummy homemade rolls are always comforting and just so good!

I tried a new sweet potato souffle recipe yesterday….not healthy, but it was incredible and requested that I make it every holiday from now on 😉
