I ran a very fun 5k with my cute daughter this morning. The 6th graders at her school run an “end of the year 5k”, so I decided to run it too! It was a lot of fun.
As I was getting ready to leave this morning, my cute Jimmy decided he wanted to come along too…
He got so excited when he saw me putting on all my running garb. So, he ran the 5k too….and did a very awesome job, I might add. He’s such a sweetie.
I grabbed a Coconut Chia Seed Protein Pancake out of the freezer before I left. I popped it in the toaster and topped it with a little natural peanut butter.
It was the perfect pre-run fuel.
I’m really happy my kid’s school decided to organize this little 5k. My daughter said they’ve been running about a mile several times a week to prepare for it. I think that’s great!
She doesn’t seem to think it’s so great, lol. 🙁
The kids ran the 3.1 miles around the neighborhood. The 6th graders were instructed to run on the sidewalk, so Jimmy and I ran alongside them on the street.
I was their little cheerleader and cheered them on and encouraged them to RUN, not walk as much as they could. My daughter said, “Why does my mom have to be a runner?!” I think I might have maybe sorta kinda embarrassed her a bit with my cheering.
It was fun. Hee hee.
I also enjoyed dumping water on her at one of the water stations. I told her she would thank me later.
And she did!
Anyway, it was a fun morning. We ended up “run/walking” the 5k in 41 minutes. I told my daughter I want her to do another 5k with me and RUN the whole time. I don’t think she was too fond of that idea.
We’ll see….

Yesterday I made some yummy Coconut Chia Seed Protein Pancakes for breakfast and they tasted so good to me!
I topped them with peanut butter, strawberries, unsweetened coconut and a little agave nectar. Yum! I especially love them because they are grain and gluten free! Sa-weet! I told y’all I had one of them this morning before my run too. I really love protein pancakes in all their varieties. Super yum.
I also made a really yummy lunch yesterday that I loved! In fact, I loved it so much that I just had the same thing for lunch today…
An egg salad wrap with spinach and peppers on a low-carb tortilla.
I used 3 hard boiled eggs, but I only used half of the yolks. I mixed them with a little salt, pepper and about a tablespoon of olive oil based mayonnaise.
It was seriously so good and so filling. I might just make it again tomorrow!
I went to my Boot Camp class last night (and just about died!), so dinner was a little crazy. I ended up fixing random stuff for the kids and I had some leftover salad and chicken…
I topped it all with a little lite ranch and it was rather tasty! I also had it with some leftover veggies and dip….
After eating this, I felt like I needed something sweet. Soooo, I had a little bit of caramel/cheddar popcorn from Costco and half of a graham cracker. It was just perfect.
Oh, and the salad was leftover from my niece’s baptism on Saturday. We went to her baptism and then went to my sister’s house for dinner afterward.

Salad topped with Briannas Poppyseed dressing, baked beans, potato salad and watermelon. I also had a hamburger patty and a couple cookies. It was awesome! I love potluck food.

YUM! I will try an egg salad wrap, too. Looks delicious! Also, the protein pancakes!! I’ve been making protein waffles for my kids – they just gobble them up – 🙂
