A Fun 5k and Yummy Food

I ran a very fun 5k this morning with Kev and my friend, Amy.  It was sponsored by the local hospital and I loved it!  It was called a “Family 5k”, so there were a bunch of kids (some of them on bikes) and even a few dogs.  It was great.

I ate a yummy chocolate protein pancake before we left for the race…

I just pulled it out of the freezer, popped it in the toaster and topped it with peanut butter, berries and a little sugar-free syrup.  Yum!

And here I am with my friend Amy just before the race started.  BTW, I always feel like a giant next to her.  I’m almost 5′ 9″ and she’s 5′ 2″, so I bent down and she stood on her tippy toes so we could even it out a bit.

It was a fun race, although it was a little hot (it started at 9:00 AM).  I finished right around 25 minutes.  I’m not sure of my actual time….my watch said 24:54 and the race people said 25 “something or other”, so I’m just callin’ it 25ish.

Kev finished about 20 seconds ahead of me.  We ran together most of the way, but he pulled ahead at the end.  Amy finished a little later because she ran it with her 10 year old daughter and some of her nieces.  Awesome.

Speaking of kids…I couldn’t get any of mine to run it with me!  Super lame.  I did, however talk them into sitting along the sidelines and cheering us on.  Woo hoo.  They also had our sweet doggie, Jimmy with them as well.  Soooo, when I saw the kiddos, I ran over and grabbed Jimmy’s leash and he ran with me for about a mile.  Then, when I saw the kids again, I handed him off.  He loved running with me, but wasn’t so happy when I handed him back to the kids.

It was a great race and I’m so glad I ran it!

I thought I’d share some yummy things we’ve been eating lately.

I made a big ‘ol batch of chocolate protein pancakes for breakfast the other day.  I actually let my kids eat them too (sometimes I’m not so good at sharing, lol.)  I also decided to take some fun pictures…

Yum.  I obviously didn’t eat ALL of those pancakes, but just had a little creative fun with the pictures.

I have to tell you something funny about this picture.  I had my 14 year old pour chocolate syrup on the pancakes while I snapped the pictures.  I told him just to “keep on pouring” while I took a bunch of pictures.  He finally said, “Mom, I think these pancakes are going from healthy to just plain happy!”

I laughed and laughed so hard.  Love it!

By the way, I usually don’t put chocolate syrup on my pancakes, but man it was good!  It made it taste just like a treat!  Super yum.

I also had some Oats in a Jar for breakfast yesterday morning.  I always get so excited when I finish off a jar of peanut butter….especially this kind of peanut butter….

I don’t know what my problem is, but I haven’t been feeling like cooking dinner lately.  I’ve been slackin’ a bit.  I think I have summer fever and just want to play all day!

I’ve still been making dinner, of course, but it just hasn’t been too exciting.  For example, I made tacos the other night (one of the kids favs!) and I decided to make some taco salad nachos for me!

They were actually pretty good!  I used some Food Should Taste Good chips on the bottom (I love them!) and I topped them with romaine, turkey taco meat, fat free refried beans, a little shredded cheese and some green salsa!

Super easy and super yummy.

Well that’s all folks!  It’s just after midnight and I gotta go to bed!  I hope you are all having a wonderful weekend!

    I’d be stuffed after eating one of those chocolate protein pancakes. Have you tried strawberry and vanilla flavour pancakes before?

      I know, these protein pancakes are very filling! I make vanilla ones, but I’ve never tried strawberry. I bet they would be fantastic!
