I haven’t had a chance to update the blog for a few days, so I have a lot to share!
Kev and I went to a Salt Lake Bee’s Baseball game with a couple of our kids on Thursday night and we had a lot of fun!
I love going to Baseball games. Ironically, I don’t care about the game too much….I just love the food, people and fun! I also love the “lay back, summer feeling” too. It’s the best.
The boys loved having their picture taken with the “The Bee.”
My 5 year old saw a “balloon lady” at the game and was SO excited when he saw her make a balloon sword and holster. We decided to have her make him one too…
He loved it so much and played with it all weekend….until it popped. 🙁 I warned him that would happen. So sad. 🙁
I had a lot of fun with my cute kiddos….
We didn’t stay for the whole game, but we had a wonderful time. The Bee’s lost though. 🙁

I ran 5 miles on the treadmill on Friday and I LOVED it! Shocking, I know!
I wanted to run outside, but it was way too hot by the time I was ready to go. Sooo, I knew I had to run on the treadmill.
I was dreading it….and kept putting it off all day long.
I decided to create a fun treadmill workout to make it more fun.
I loved it AND it kicked my can! It made the treadmill a whole lot less boring.
I started out with an easy warm up…
I just about died during the high intensity intervals (and loved it!)…
And I was completely SPENT when it was over!
My treadmill said I burned almost 800 calories! Wow! I don’t know if it’s accurate, but it made me happy. 😉
After my run, I made a YUMMY protein shake that I loved!
I make chocolate protein shakes all the time, but this time I decided to thicken it up a bit so it was more like a milkshake! It was SO good. I’m sure I’ll be having it a lot this summer. It was so refreshing.
Chocolate Spinach Protein Milkshake
- 1 cup unsweetened almond milk (or milk of your choice or water!)
- 1 scoop chocolate protein powder
- 1 tablespoon cocoa powder
- 1/4 of a frozen banana (you can use fresh too, but frozen makes it more “ice creamy”)
- 2 big handfuls baby spinach
- a pinch of xanthan gum (a little goes a long way!)
- a bunch of ice (15-20 cubes or more!)
Put the almond milk, protein powder, cocoa powder, banana and xanthan gum in the blender and mix it well.
Tip: Whenever my bananas become a little too ripe, I like to slice them up and freeze them! It makes protein shakes super easy. Love it!
Add the ice and mix well…

Technically, you could just dump everything in the blender and hit “go”, but I do it this way for some reason. 😉
This shake was so good! It tasted just like a thick, yummy milkshake.
This shake was also HUGE! I filled my glass two times and was stuffed! Oh, and you can’t taste the spinach AT ALL. I promise.
Also, xanthan gum really helps to make this shake more creamy. If you leave it out, your shake will have ice crystals and more of an “icy” texture. You can buy xanthan gum at any health food store and at most grocery stores (in the health food isle). I bought mine in bulk at Winco.
The nutrition facts are pretty stellar too…
Oh, and my kids love this shake! My 3 year old quickly snagged it and loved it!
I had a hard time getting it back from him!
