A Fun Getaway and Real, Clean Food!

I went on a fun overnighter to Salt Lake City last night with some of my childhood friends and we had such a great time!

We went to Cheesecake Factory for dinner (yum!) and it was wonderful.

I ordered a Veggie Burger off of the SkinnyLicious menu and it was fabulous!  Seriously, I loved every bite!  It was on a yummy bun, but for some reason you can’t see it in this picture. 🙁

Here’s the description off of the Cheesecake Factory menu: A Delicious “Burger” Made with Brown Rice, Farro, Couscous, Mushrooms, Black Beans & Onion. Served on a Toasted Bun with Lettuce, Tomato, Red Onion, Pickles & Mayo. Served with a Green Salad.

Seriously, so so good!  I think I’ll order it next time too.

After dinner, we went back to our hotel and chatted the night away.  We talked and talked and laughed and talked and laughed ALL…..NIGHT….LONG!  I don’t think we’d ever run out of things to talk about!

Our room had two tiny double beds, so we requested a couple roll away beds.  I was laughing my head off about the “seat belt” on my bed.

I don’t know why it seemed so funny to me, but I think everything was funny last night.  I love my friends so much.

I got back late this morning and got right back to the daily grind.  It was such a fun getaway with some of my favorite people in the world!

Well, I had a really good week of healthy eating, but I slacked quite a bit on the exercise front.  In my defense I’ve been fighting a pretty nasty cold this week that was lovingly given to me by my two littlest boys.  I’ve felt very achy, sore throaty, tired and just blah.

However, I’ve been downing the Vitamin C and it’s been helping a ton!!  I felt absolutely horrible for a couple days, but it seemed to go away quickly.  My boys were so sick and their colds seemed to last a lot longer than mine!  I’m a huge believer in Vitamin C.

Anyway, I told you guys I really wanted to kick my diet up a notch this month, right?  I try to eat well most of the time, but I’ve found myself slackin’ quite a bit lately.  Soooo, for the next month (and probably longer) I’ve decided to load up on the fruits and veggies and eat as clean and “real” as possible.  I’ve been eating a salad every day for lunch and have been trying to squeeze fruits and veggies into my breakfasts and dinners too.  I’ve been avoiding all chips, crackers, unhealthy breads, treats, candy, fried foods, fast food, etc.

However, I have allowed myself to have a few of my healthy treats.  I think it really helps to keep me sane and makes my “healthy diet” not hard at all.  I’ve had protein pudding a couple times and I LOVE IT so much!

It totally satisfies my sweet tooth and is a wonderful late night snack.  I LOVE it!

I went to Costco on Monday and loaded up on a bunch of their incredible produce.

I also bought some Tilapia (gasp!)  I’m really not a fan of seafood, but this Tilapia was on sample and it was great!  My boys liked it too, so I decided to get it!

I’ve been having this for breakfast pretty much every day this week…

Veggie egg scramble with English muffin

1 egg + 3 egg whites scrambled with peppers, onions, and spinach and topped with a little cheese and tomatoes.  I served it with a whole grain English Muffin too.  LOVE IT!

I did change it up a little bit yesterday…

I decided to fry up two eggs over hard and top them with a little cheese.  I also had the same English Muffin topped with a little honey (love!) and some leftover veggies on the side.

When I got back from my overnighter this morning, I decided to make a batch of Chocolate Protein Pancakes.

I topped them with a little natural peanut butter, bananas and sugar-free syrup.  I also fried up two over hard eggs again and topped them with cheese.  So so so yummy!

I’ve been lovin’ this as a mid-morning snack this week….

A Chobani yogurt mixed with a little cottage cheese and topped with chia seeds, craisins and nuts.  This is insanely good and tastes just like a treat to me!

Chobani is on sale at Costco right now, so I bought a big ol’ 15 pack for about 9 bucks….

I’ve been making my yogurt/cottage cheese creation every day and have taken in on the go a couple times too…

I big salad full of a whole bunch of random things!  It’s tasted so good to me!

I made Grilled Chicken (using the best marinade EVER), veggies, brown rice and fruit for dinner one night and everyone LOVED it!

I made a bunch of extra chicken so Kev and I could eat it throughout the week, but the kids loved it SO MUCH that there wasn’t much left!

I was able to make one leftover meal out of it though…

I also made Taco Soup one night and it was simple, easy and hearty.  Most of my kids tolerate it as well.  This is not a yummy picture, but I’ve found it’s hard to take an appetizing picture of Taco Soup, lol!

That’s pretty much all the food pics I took this week.  I’ve been lovin’ all the real, fresh food!

I did go out to lunch with my parents and sister to Sweet Tomatoes this week and it was fabulous.

I also got a small cup of Chicken Noodle soup and a piece of my FAVORITE Sour Dough bread.

Everything was incredible.

Well, that’s all for now folks!  I’m going to keep the healthy diet going this next week and will hopefully get some killer workouts in too!  I hope y’all have a great Saturday night!

    Melanie, do you just toss the yolks, when using egg whites, or do you buy your egg whites separately – like in an egg white container of all egg whites?

      I usually toss the yolks. I’d like to save them, but I don’t think I’d ever use them. I’ve bought egg whites in a container before and I like them, but I really like using a real egg. I don’t have a strong opinion either way though. 😉

      I don’t know why that seat belt made me laugh so hard! I think it’s actually meant to keep all the bedding on the roll away bed when they’re moving it from room to room. It sure looks funny on there though!!

    Your posts are always so much fun! I want to put seat belts on all my dining room chairs now, to keep my kids at the table.
    It’s wonderful you got to have a girl’s getaway. I think socializing and treating ourselves to fun with friends is so, so important for our well-being!

    There is nothing better than getting together with your old crew! Anything can be funny. Dont be so hard on yourself with the skipped workout. Eating right is more than half the battle!

    I think all of your food choices have been great and everything looks so fresh. I love big produce shopping trips – it makes it so much easier to grab healthy stuff from the fridge!
