Hey everyone!
We’ve had a fun, but busy day today.
This morning I decided to go to a class at the gym. I usually go to an evening class on Tuesdays, but I realized my favorite Saturday class is also offered Wednesday morning at 9:00. It’s SUCH AN AMAZING class, so I decided to head on over.
I don’t like to eat too much before a workout, so I just grabbed a quick protein bar on my way out the door.
I ate about 1/3 of the bar on my way to the gym and then ate the rest of it after my workout was over. It was perfect.
I’ve told you guys when I go to my Saturday class I have to show up 10-15 minutes early or I don’t get a spot, right?
Well, HOLY COW….today’s class was INSANE! I couldn’t get there early today because I had to drop my kids off at school first, so I showed up to class just as it was starting.
The room was filled to the max. I would guess there were about 60 people there. I couldn’t see a spot anywhere and I was so sad.
However, I realized there was one small spot available where all the benches are usually kept (it was available because everyone was using the benches), so I squeezed into that small spot. All of the barbells were gone, so I was just going to use dumbbells and then the instructor gave me her bar.
SO nice! And a little bit embarrassing. 😉
Most of the dumbbells were gone too, so I had to use 15 pound ones (I usually use 12#.)
Anyway, I’m SO GLAD I was able to find a spot because that class is so dang freaking crazy. I love to go to classes at the gym because I could never push myself as hard as my instructors push me.
For example, we did 8 million different kinds squats and lunges today. I got to the point where I thought my body was going to give out and I just couldn’t do any more. If I was working out on my own, I would have quit right there and felt pretty good about it. However, in this class we were only about half way done at that point.
Ya.
It’s seriously crazy.
We always do a bunch of pushups too and today was so tough. We did 40 incline pushups on the bench and then quickly flipped over and did a bunch of tricep dips until I thought my triceps were going to fall off. THEN, we did that same combo three more times!! I thought I was going to die.
I hope that all made sense.
After the class was over, I decided to take my two littlest kiddos to go visit Kev at work and go out to lunch. Kev works in downtown Salt Lake City, so we don’t make the trek to see him too often.
We decided to go to Paradise Bakery and it was yummy. We weren’t too impressed with the service, but the food was wonderful.
I also loved hanging out with some of my favorite peeps.
I ordered the Fuji Apple Chicken Salad with a half of a Chicken Artichoke Panini. I loved both of them so much!
My meal also included a free chocolate chip cookie (so sad) but since I’m not eating treats right now, I decided to bring it home for my big kiddos.
Kev ordered a big bread bowl full of potato soup and he said it was wonderful. We ordered kids meals for the kids, but they were more interested in eating mine and Kev’s food! You can see my 5 year old snaggin’ Kev’s soup in the picture above and my 3 year old loved my salad.
We had a lot of fun and it was sure nice to hang out with Kev too.
Later on, I went to Parent Teacher Conferences at the Junior High (oh joy!) and then the kids had some church activities to go to, so I decided to make a quick and easy dinner.
I made french toast using Kev’s mom’s homemade white bread. She always brings us a few loaves whenever she comes to visit. We keep it in the freezer and love to pull it out to make french toast!
The kids and Kev LOVED the french toast on Grandma’s bread, but I decided to make myself two slices of french toast using some Sara Lee Delightful bread.
It tasted so good! I also scrambled some eggs/egg whites and had a slice of turkey bacon too.
I topped my french toast with a little sugar-free syrup and some blueberries. It tasted wonderful! I love making breakfast for dinner because all my kids LOVE it and it’s quick and easy to make.
For some reason it always makes a major mess of my kitchen though. 🙁
Oh, and I also made another quick and easy dinner last night too. I made a version of my Chicken Broccoli Alfredo recipe and it turned out great!
I cooked up some whole wheat spaghetti noodles, roasted a bunch of veggies (instead of just broccoli) in the oven and cooked up some chicken seasoned with lemon pepper (I also threw in the rest of the leftover turkey from Sunday.) We topped everything with some Light Classico Alfredo sauce.

I love this recipe because it’s quick and easy to make and very kid friendly. I also love it because I only take a little bit of noodles, but then load up on the chicken and veggies.
It’s a Win-Win all around.
Well, I’ve been trying really hard to get my sleep, so I’m going to end this so I can get everyone to bed and head there myself!

Fun Susan fact: I love all bread and sweets but cannot stand French toast. I don’t know what it is about it, but I’m just not a fan. This does look pretty yummy though!
I know exactly what you mean about the instructors motivating you more than you can motivate yourself. All the time I tell myself at class “just..keep…going.”and manage to keep going!

I used to not love french toast, waffles or pancakes, but over the years they have grown on me. I love my classes at the gym and I love reading about your stories at the gym too!

I love breakfast for dinner. Sometimes I’ll make an egg white omelet with cheese and light turkey bacon at seven in the evening. I’ll even have coffee with it too. I agree classes really push you to work harder than you would on your own.
