I don’t have a ton of time, but I wanted to hop on here and do a quick post. 😉
I’m teaching a “Healthy Habits” class tomorrow at an activity for our church. It should be fun! I’ve been busy this week preparing for it, so I haven’t had much time to blog. So sorry.
I’m still going strong with the “healthy cleanse” and I love it! It really hasn’t been too hard. The first 4-5 days were really tough, but now it’s just become second nature. Yay.
It’s been SO NICE to add in fruit! I must say that fruit has never tasted better. It’s amazing how much better healthy food tastes when I’m eating healthy! I love it. We’ve been buying apples at Costco and they are so good right now. They’ve had tons of organic apples at GREAT PRICES! Love it!
BTW, I’m not a stickler about organic things. My theory is if it’s available and not too expensive, I buy it. If it’s not available or too expensive, I don’t. Pretty simple. My #1 focus is on REAL food. Organic is a plus, but not a must. With that being said, Costco is the best place ever to buy organic things! They have a great selection and great prices! LOVE IT! I have to say, apples are one of my favorite things to buy organic. They really taste so much better.
Anyway, lately I’ve been eating a lot of the same old, same old, but here are a few new things I’ve been eating…
Chicken and veggie stir fry with apples
This tasted SO GOOD to me! I just cooked up some chicken in my electric frying pan and then added in a bunch of veggies (carrots, peppers, broccoli, celery and onion). I topped it all with a little Panda Express Orange Sauce (bought at Costco.) I know it’s not completely healthy, but all of the ingredients in the sauce are real and I didn’t use too much of it at all. Besides, I was desperately in need of new flavors! The kids all loved it too. They chowed the veggies and it made me happy!
I made tacos for the kids and Kev and I had salads. I was sad I couldn’t add cheese or sour cream, but it still tasted yummy. It’s basically spinach, romaine, taco meat, guacamole, olives and salsa. It hit the spot and was super easy to make!
Grilled chicken, sweet potato (topped with honey and cinnamon) and salad
THIS WAS SO DANG YUMMY! The salad had romaine, cucumber, apples and pecans in it. I topped it with a little Raspberry Vinaigrette. I could have this for dinner every night.
I’ve still been enjoying my Healthy Mug Cake when I’m in the mood for something sweet. I LOVE to top it with a little Justin’s Maple Almond butter and bananas! Divine. Love it.
In fact, the other day my daughter decided to make “her own version” of a mug cake. She “de-healthified” it, lol. She used regular sugar instead of Stevia and added in chocolate chips. She said it was pretty good!
It doesn’t look too good, but she said it was tasty!
Well, there ya go. So far, I’ve lost a total of 5 pounds. I lost 4 the first week and only 1 since then! Sort of lame, but for some reason I’m not discouraged. I feel good and know I’m taking good care of my body. I also feel very stubborn and want to see this thing through to the end!
I DO feel a little leaner and stronger though. Even though it’s not showing on the scale (dang it), I know what I’m doing will work. I think I’ve gained a little muscle too and muscle weighs more than fat.
I’ll just keep pluggin’ away and keep you all informed.
