Back With a Vengeance!

Well, it feels good to return to some semblance of normal!  Wow.  I had a lot of fun with my siblings and with Kev’s fam.  Here are some pics from the last night with my bro and sis…

I have 6 siblings, so this is just half of them!!  I love my family.  Oh, and it’s not too often that I feel short.  I am 5′ 9″.  Very rare indeed.

My bro-in-law also went to the store and bought a TON of treats!  Reeses, Junior Mints, Peanut M&Ms, Hershey kisses and licorice!  Man.

Not good!  Made for a good time though! 😉

Now that the partying is over, I’m happy to be “ON” once again.  I allowed myself to indulge a little over the past couple weeks.  My workouts were also a little hit and miss.

BUT, now I am back with a vengeance!

As much as I love slackin’ a little bit….I love being disciplined and working hard so much more!!

Here are some of the yummy things I’ve been eating the past couple of days…

Egg-Quinoa-Omelet

Egg and Quinoa Omelet!  I’ve had this the past couple of days and it is so so good!  Here’s how I made it…

Saute onions, peppers, chopped turkey, cooked quinoa and spinach in a little olive oil.

Beat 1 whole egg+3 egg whites+seasonings in a bowl.  Add egg mixture and a little feta cheese to pan.

Cook for a few minutes until eggs are set.  Flip over and cook the other side.  Note:  This was more like a scramble instead of an omelet.  It didn’t stick together very well. 😉

Top with chopped tomatoes and salsa!  Enjoy!

This was SO good and SO filling!  I really loved the quinoa in there and the melted feta cheese!  It reminded me more of an indulgent casserole instead of an omelet.  I may be having this for the next several days!

Oh, and FYI I’m sure you could sub brown rice or something else for the quinoa if you like.  It’s a great way to use up dinner leftovers!

I’ve also been enjoying lots of yummy snacks.

Apples-and-Almonds

The kids are in swimming lessons this week, so I usually take a snack with me on the run.  I had apples with almonds, banana with peanut butter and grapes with cocoa roasted almonds the past couple of days.  Yummy and portable!  Win-Win!

I’ve been trying to have a protein shake every day too.  I’ve been enjoying this yummy Blueberry Chia Seed Protein Shake the past couple days.  Here are the ingredients I used…

Blueberry-Chia-Protein-Shake-Ingredients

  • 1 C. Unsweetened Almond Coconut Milk (I LOVE THIS STUFF!)  It’s kind of hard to find though.  I’ve only been able to find it at Smiths.
  • 1 scoop Vanilla Protein Powder (I’ve been lovin’ this brand.  It’s sweetened with Stevia, which I love!)
  • 1/3 C. Frozen Blueberries
  • 1/4 C. Fiber One Cereal (sounds gross, but I think it tastes like little bits of cookie in there!)
  • 1 T. Chia Seed (you could sub ground flax seed too.)
  • I usually add 2 big handfuls of baby spinach too, but somehow I FORGOT!  Weird.

Mix everything in the blender.  Add 6-7 ice cubes and blend well!

      Thanks so much! Ya know, I have used coconut milk before and I’ve loved it. I just really love almond milk…especially this coconut almond milk! I’m sure you could sub in coconut milk in any of my protein shake recipes and it would be great! Thanks for stopping by my blog! 😉
