I’ve decided I must be gettin’ old.
On Wednesday we took the kids to Lagoon (our local Amusement Park) to enjoy the last little bit of summer we have left. We spent the whole day there (11:00 AM-10:00 PM) and just played and played and played! My sister and her kids met us there and spent most of the day with us too. We had such a great time.
I went on several dinky rides with the kids and Kev and I traded off going on some of the bigger rides with the big kids. We were even able to go on a few rides together while our two littlest were zonked out in the double stroller for a bit. Our 13 year old who isn’t too fond of rides (I don’t know where he got that gene!??) volunteered to sit with them for a bit. So sweet.
ANYWAY, we had a wonderful day….but I’ve spent the past 2 days recovering! I’ve just been so tired and “bump on a log” ish.
I am old.
On a brighter note, I made some wicked yummy Banana Bread Protein Pancakes this morning! They turned out so so awesome!
I’ve had a very ripe banana sitting on my counter the past couple of days. It was begging me to turn it into something…so I did! I googled “banana protein pancakes” and found a bazillion recipes. However, I couldn’t find a recipe that included all of the ingredients I wanted. Sooooo, I decided to tweak my other protein pancake recipes a bit and surprisingly it turned out on the first try! Weird.
I loved these pancakes! They tasted a lot like banana bread! I will especially enjoy them on cold autumn mornings (I’m very ready for fall!) Woo hoo. So, here ya go….
Banana Bread Protein Pancakes
(makes 6-7 medium-sized pancakes)
- 3 egg whites
- 1/3 cup lite/fat free cottage cheese
- 1/2 very ripe banana
- 1-2 tablespoons unsweetened almond milk (or milk/water)**
- 2/3 cup oats
- 1 tablespoon ground flaxseed
- 1 scoop (~1/3 cup) vanilla protein powder (or flavor of your choice!)
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon
**You may need to add more liquid (milk/water) to your batter depending on what kind of protein powder you use. Just keep adding more liquid until the batter is the desired consistency.**
Quick note: I really love Great Value (Wal-Mart) brand cottage cheese! It’s my fav. I love the texture and the flavor.
Mix wet ingredients (egg whites, cottage cheese, almond milk and banana) in the blender.
Add the rest of the ingredients and blend well.
Put batter in fridge for about 3 minutes while griddle is heating up.
Pour batter on hot griddle.
Cook 2-3 minutes and then flip.
Cook 2-3 minutes more and then remove from pan.
Top with favorite toppings.
I’m not a huge syrup fan, so I love top mine with a little almond butter, fruit (bananas this time) and a drizzle of agave nectar. LOVE IT!
I made this recipe twice because I wanted to use the other half of my banana! If you have a big blender, you could probably double this recipe. My blender’s pretty lame, so I just had to make the recipe twice.
I froze all the extra pancakes in a freezer bag.
I probably didn’t even need to write the date on there. These will be gone in no time. I love to throw these in the toaster in the morning and eat them for breakfast or take one with me in the car on the way to the gym. They also make a perfect snack.

I made these for the first time this morning….and I really loved them!! They were delicious and very filling. Mine did not seem to turn out as fluffy as yours look. I used the egg whites in a carton instead of fresh egg white…I wonder if that was the difference. I’ll try fresh next time…thank you so much for sharing!!

I’m so glad you enjoyed these pancakes Kathy! I’m sorry they didn’t turn out as fluffy though. It could be the egg whites, but I would question the baking powder maybe. I’ve heard that if you don’t use good quality baking powder/soda, things don’t rise as well. I used to buy generic baking powder/soda and then when I switched back to name brand, I totally noticed a difference! Also, if the baking powder was too old, it could affect it too.

Do you think it will be okay if i dont add the protein powder?

Unfortunately, I don’t think it would work out too well. The Protein Powder adds sweetness and substance. I’m sure you could sub a little more flour and maybe some stevia or something, but I’m not sure how much. 🙁

I don’t know of a great substitution, but you could probably just leave it out and then play with the recipe a bit. I would try adding more banana and maybe another egg and see how the batter consistency turns out. If it needs more liquid, you could probably add a bit more almond milk too. This recipe is very forgiving. I also have some pumpkin protein pancakes and coconut chia seed protein pancake recipes (under my recipe section) on my blog that don’t call for cottage cheese. They are both wonderful!
