Hello my friends!
I love this time of year! I love the perfectly beautiful weather we’ve been having here in Utah! I love the beautiful flowers and green, green trees everywhere. I love that it stays light until almost 9:00 PM. Love it!
I really wish we could just freeze time and hang out here for a few months. It’s my favorite time of year.
Today I took my three little boys on a hike that I loved so much! I’ve been trying to take them on an adventure a couple of times a week, just to get them out of the house and help us all to be active.
It’s just so sad that everything is closed and we can’t even go to the park and play on the playgrounds! Soooooo, hikes have been our favorite thing.
We headed over to Draper (Utah) and hiked to the Bear Canyon Suspension Bridge. It was an awesome hike!
It’s a relatively short hike (just over 2 miles), but it is quite steep. There’s not a lot of shade, so I think it would be best to hike in the spring or the fall. Today the weather was absolutely perfect.
It’s also the perfect hike for kids! It’s interesting, beautiful and the views of the valley were gorgeous!
My five year old kept saying, “Utah is huge!” as he looked out over the valley. It was neat to be able to see out so far.
The bridge was really, really cool too!
I was surprised that the bridge shook when you walked on it. I know I probably shouldn’t be surprised since it is a suspension bridge, but it surprised me! It was kind of freaky. I’m not afraid of heights, but I gotta say, I felt a little bit afraid of heights being on that bridge!
Sadly, I didn’t take too many pictures. Boo. I want to go on this hike again with the whole family though, so I will take more pics next time!

You can kinda see the beautiful valley views, but it really doesn’t do it justice.
My boys also enjoyed climbing up on this big rock…
My five year old was a little afraid of being up so high, as you can tell by his face, lol!
It was a beautiful hike and I’m so glad we took the time to go! I can’t wait to go again.
When we got home, I made a yummy, easy dinner. I made Korean Beef from Mel’s Kitchen Cafe.
I changed the recipe just a bit by adding a little bit of minced onion (maybe 1/4 of a small onion) when I cooked the beef and we also sprinkled some sesame seeds on top. It’s such a yummy, quick and easy meal!
I made some Jasmine rice, broccoli and some Pot Stickers on the side. My kids love those Pot Stickers (from Costco), so when I make them, nobody complains about dinner. Ha.
It was actually a really yummy dinner and I love how easy it is to throw together. The leftovers are awesome too!
I’ll also share the dinner we made last Sunday…..

I told ya’ll that we’ve been loving making big, yummy dinners on Sundays! There are a lot of things I’ve been loving about being in quarantine and Sundays are definitely one of them.
Kev’s been smoking a lot of different meats and things on the Traeger Grill. This Sunday he smoked a chicken and some awesome potatoes! They were the best “baked” potatoes I’ve ever had!
He brushed them with olive oil and then rubbed them in pink Himalayan salt (it’s just the best salt we had on hand!)
They were so dang good and I’m not even a big fan of baked potatoes. YUM!
We topped them with sour cream, cheese and some bacon that I cooked up. I’m sure we will be making them again!
I also made some Cheesy Garlic Biscuits, also from Mel’s Kitchen Cafe. I love her website! They were so yummy and tasted just like the ones from Red Lobster.
I love food! Ha ha! And I love cooking and baking when I actually have the time to do it. That’s why I’ve been loving our Sunday dinners so much…..we have the time to cook!

Well, I’m still doing Live workouts on my Happy Being Healthy Facebook page twice a week, every Tuesday and Friday at 9:00 AM Mountain Time.
It’s been fun and it’s helped me to be a whole lot more consistent with my workouts! I’m sure if I was just stuck working out at home all by myself, I would not be doin’ it too often and I’d be going crazy. I really do not love working out from home. Blah.
It’s definitely been a lot more fun to work out “with” other people!
I’ve also been doing Live workouts with my friends in the neighborhood every Monday and Wednesday morning. It keeps me busy!
I should mention though that I will not be doing a Live workout tomorrow morning. I’ve felt a little run down and worn out this week, so I decided not to do one this Friday. I’m going to rest my weary body. I’ll be back on Tuesday though!

It’s a thirty minute HIIT workout + warm up and cool down. The entire workout is just over forty minutes.
I love HIIT and think it’s a lot of fun!!! It’s such an effective and efficient way to work out! You get a lot of bang for your buck.
