Happy Friday friends!
I hope you are all doing okay in the crazy world we’re livin’ in!
The weather here in Utah has been absolutely beautiful all week long and it’s made me so happy. It certainly makes this whole quarantine thang a lot more livable!
This morning I did a Live 30 minute Ab and Core workout on my Happy Being Healthy Facebook page. It was a lot of fun and I felt my abs burnin’!
Afterward, I went on an awesome hike with my 16 year old son. Last night he told me he wanted to go on a hard hike and asked if I’d like to go with him. He told me he didn’t want his little brothers to come because he wanted to go fast and get a good workout in. I was like, “Heck ya! That sounds awesome!”
So, we headed over to the Bell Canyon Trail in Sandy, Utah.
I’ve been on this hike many times and it’s a great one! It’s beautiful, fun, interesting and it’s tough. It’s quite steep and it involves a lot of climbing!
I love it.
Even though I’ve been on this hike many times, we went a lot further this time! Every other time I’ve gone on this hike, I’ve had kids with me, so we’ve just hiked up to the reservoir (about 1 mile each way) and gone back.
This time, we went about 5 miles total and it was tough! So dang fun though and so beautiful!
We wandered around looking for the waterfall, but never found it!
The reservoir was quite low though, so it’s possible there wasn’t a waterfall. I dunno. We had fun wandering around though.
At one point we climbed straight uphill on a sparsely traveled trail and wandered all around. We came down the trail and climbed over a ton of huge boulders. It was quite sketchy and I was afraid I was going to slip and fall the entire time, but it was fun!
I would’ve taken some pictures to share, but I was focusing on not dying. Ha ha! It was fun and I was grateful we didn’t have the little boys with us.
My body is tired and I’m so glad we did that hike! My son said he wants to go on a couple hikes a week like that, but I don’t know how many I’ll be able to go on with him. We’ll see.

Since the weather was so nice this week, we also had a picnic in the backyard one day. Desperate times, ha ha!
It was actually kind of fun and it felt nice to soak up the sun!
I just made a bunch of sandwiches and we had chips, veggie straws, apples, string cheese and guacamole too. Yum!
I made myself a protein shake and brought it out with me…
I think my shake consisted of:
- Kefir
- Water
- Naked Whey plain Protein Powder
- Frozen fruit (pineapple, grapes and blueberries)
- chia seeds
- greens powder (I used this one)
- Power Greens (kale, chard and spinach)
- An Emergen-C packet
I never measure anything! I just chuck it all in the blender and hit go.
I laughed as I realized all of the drinks I brought out with me…
I brought my protein shake, some warm lemon water and my post-workout drink concoction (water, BCAAs, Glutamine and some True-Lime drink mix) since I’d just finished my workout.
Yes, I’m a heavy drinker! 🙂

I also went on another fun hike a few days ago with some of my kiddos.
I’m always tryin’ to find ways to keep them entertained during the day and since everything is closed and there’s not a lot to do, it seems like we go on hikes quite often!
Thankfully, they’ve been loving it though.
This time we went on the cutest trail, one that we’ve never been on before. It’s called the Jungle Trail and it’s made just for kids.
It’s in the Corner Canyon area in Draper and to get there, you start at the Carolina Hills Trailhead. At the beginning of the trailhead, you will see three trails. We took the middle trail, hiked about 0.4 miles and then saw the sign for the Jungle Trail on the right.
It’s a pretty short trail, but it’s a lot of fun. There are a lot of branches to climb over and duck under, there are some stumps to jump and climb on, there are several little forts made out of branches and there’s even a tire swing!
It was so much fun and I highly recommend it! We will definitely go again.
The only bad thing is that there was poison ivy everywhere! There were signs like this all over the place…
The kids were really good about staying away from it, but we could see it everywhere! It was actually kind of neat, albeit freaky, to see so much of it.
Well that sums up some of the fun in the sun we’ve been having this week!
I will also share that I made my Healthier Banana Bread a few days ago and it was so yummy!
For some reason, this quarantine makes me want to bake! This banana bread fit the bill and it’s quite a bit better than all of the other baked goods I want to make!
It tastes just as good as my Grandma’s full fat, full sugar recipe too! I love it.
