K, I told you I was going to post the recipe we had for dinner last night. We had Tilapia and it was rather tasty!
Here’s the deal….we are not “fish” people. It kind of gives me the heebies. Kev feels the same way. I just can’t quite get over the smell and the “fishiness.” I can handle tuna fish (w/ lots of pickles), but that’s about it.
However, Kev and I both know how healthy it is and we keep talking about how we need to incorporate fish into our diets! It is such a health powerhouse. I heard Tilapia was rather mild, so that’s what we decided on.
So with all that being said, this recipe is awesome. It was super duper fast and easy (love it!), and the sauce was very yummy. The only thing I didn’t love about it was that well…er….uh….it tasted like fish!! LOL!
So, if you are a “fish person” (I admire you), you will LOVE this! If you’re not a “fish person” (I sympathize with you), this is a great recipe to start with.
So, here ya go…
Broiled Tilapia Parmesan
(from All Recipes.com)
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise (lite)
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets
- Preheat your oven’s broiler. Grease a broiling pan or line pan with aluminum foil.
- In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Add dried basil, pepper, onion powder and celery salt. Mix well and set aside.
- Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.
Easy as pie.
I went to the gym last night, so I thawed the fish and mixed the sauce before I left and had it ready to go in the fridge. I also threw a couple sweet potatoes in the oven on a timer. When I got home, I cranked out the fish and steamed some broccoli to go on the side. It was so fast and easy. I just wish I loved fish because I would make this ALL THE TIME!

I topped the broccoli with a little Mrs. Dash (love it!) and topped the sweet potato with a little butter spray, Truvia and cinnamon. Oh, and my daughter loved it (she’s my least picky eater) and I made all my boys try it. They didn’t think it was too bad, but none of them wanted more. 😉

I have to say I know exactly what you are saying. I did not like fish at all a while back. I just kept reading how fish…especially salmon…is so healthy for you so I kept making salmon. I have to tell you now I love it. I do not just tolerate it…I love it. Keep up with it and you will come to love it too. I have a spicy rubbed salmon recipe as well as a ginger/soy marinade if you would ever like them. Go fish!

Kelly, I’m so glad to hear that! I really don’t like it, but I think I’ll just keep trying it and hopefully love it one day! Kind of like Green Eggs and Ham! I would love your recipes for fish! I need all the help I can get! 😉
