Happy Monday! I hope you all had a wonderful weekend!
I went to my beloved Bootcamp class tonight and it was brutal (i.e. awesome.) 😉 I got a great workout and I’m thoroughly spent.
Before I left for the gym, I put some brown rice in the rice cooker on a timer. When I got home, I took out some leftover Fall Apart Chicken from the freezer. I heated it up, opened up a can of green beans, a bottle of pears and voila….dinner was served.
Quick, easy and yummy. That’s my kind of meal. 😉
I have to say that Fall Apart Chicken is SUCH A YUMMY MEAL!! It’s also super quick and easy to prepare. I love it so much….and most of my kids love it too. Win, win.
Oh, and apparently it freezes well too. I froze the leftovers about 5 months ago and tonight it tasted just as good as the day I made it. Awesome.

I hope y’all had a fun weekend. Ours was pretty low-key, which was nice for a change.
On Friday night, Kev and I went to see the movie, Captain Phillips.
All I can say is WOW. Just wow. It was was such a great movie!! It was so so freaky, but extremely well done.
I could seriously hear and feel my heart pounding out of my chest and I was on the edge of my seat the entire time. It was insane. Tom Hanks was phenomenal as well. Loved it.
Kev and I were going to go out to dinner afterward, but it was kind of late (9:00ish) so we decided just to go home. Since I’m following my Ultra Healthy Diet, it’s not quite as fun or tempting to go out to eat anyway.
When we got home, I cut up a peach and had it with some cottage cheese. Yum.
Speaking of my Ultra Healthy Diet, I’m happy to report that I’m seein’ some decent results!! I lost 2 1/2 pounds last week and my clothes seem a lot looser too. Woo hoo.
Yes, I’m so happy and it keeps me motivated.
It’s been tough, but it hasn’t been too bad. I’ve just been trying to keep it simple and eat a lot of the healthy foods I truly enjoy.
I’m going to keep it up for the next 3 weeks and I’ll keep y’all posted on my progress.

On Saturday, I went to my fav crazy class at the gym. I was so tired Saturday morning (I stayed up way too late the night before!) and I really wanted to stay in bed and veg, but I knew I’d be bummed out if I didn’t make it to my class.
Soooo, I dragged myself out of bed and headed to class. Oh, and BTW my class isn’t very early (I leave at 8:30), but I was just so tired. It would have been much easier to chill out in bed for a bit and enjoy a quiet-ish Saturday morning.
BUT, I’m so glad I went, of course. I got a great workout and I love starting my Saturday off that way!
When I got home, I made myself an egg salad wrap (using mostly egg whites, a little S&P and some Olive Oil based mayo.) I put it all into a La Tortilla Factory mini wrap and topped it with lettuce. It tasted so good to me!
I also had some veggies with my Yogurt Vegetable Dip on the side. Loved it.

I was recently sent some “healthier” cookies from a company called Cooggies. I was sent some of the Double Chocolate, Oatmeal Raisin and Chocolate Chip Cookies to try.
Cooggies are “surprisingly delicious, better for you” cookies. They have no artificial ingredients, no trans fats, no hydrogenated oils, no high fructose corn syrups and no preservatives. They also have hidden veggies like cauliflower, sweet potatoes, broccoli and peas mixed in!
Very cool.
I decided to organize a little taste test for my kids and some of my kid’s friends!
I didn’t tell them they were “healthier” or had hidden veggies in there until after they tried them. Hee hee.
I’m happy to say that everyone liked them, but the regular Chocolate Chip Cookies were the clear favorite. Here’s the aftermath of the taste test…
For some reason, the kids weren’t big fans of the Oatmeal Raisin cookies. I don’t know why!?! They eventually got eaten though. I tried a small bite of the Double Chocolate and Oatmeal Raisin cookies and I thought they were pretty darn good!
They didn’t taste quite as good as your typical Chips Ahoy cookie, but they were rather tasty considering all the healthy ingredients they have mixed in there!
I would still definitely classify Cooggies as a “treat”, but I feel MUCH better about giving them to my kids instead of all the fake, “scary ingredient” cookies out there. If you want more information about Cooggies, you can check out their website if you so desire.

Yesterday, I threw some chicken in the Crock Pot and some sweet potatoes and regular potatoes in the oven on a timer before church. When we got home, it smelled so good!
My 5 year old kept asking, “Mom, is that yummy smell ready to eat yet?”
Too cute.
I threw a quick salad together, heated up some frozen corn and called it good.
Everything tasted great. I used my typical Crock Pot Chicken recipe, but I used Mesquite Seasoning instead of the usual seasonings. I have to say I didn’t like it quite as well, but it was decent.
Well, that’s the latest. It’s getting late and I need to head to bed now.

Congrats on your progress. To see results is very exciting, I know. All your crock pot recipes look delicious. I’ve got to buy one ASAP. Looks like the kids really enjoyed those cookies so they must be pretty good.

I like to keep my baked goods ingredients a secret until after people try them. Once people hear the word “vegan” they tend to turn up their nose!

I agree! Sadly, some of my kids are suspicious of everything new thing I want them to try. They usually end up liking it though!

I have to drag myself out of bed on Saturdays for the R.I.P.P.E.D class I do too. It’s at 8:30, which is not early on a normal day but it’s like 5 am on a Saturday. 🙂

It really is like 5 AM on a Saturday! If I go to bed at a decent time on Friday night, then it’s no problem. But, it’s fun to stay up later on Friday too!
