Coconut Chia Protein Balls!

Hey y’all!  I have a ton going on this weekend, but thought I would share a very yummy recipe!

I really love Protein Balls!  They are yummy, healthy and a perfect little snack.

I love to eat them just before a workout or run.  They give me a little energy without making me want to hurl.  🙂  They are perfect just after a workout as well.

I also love them when I’m having a sweet tooth craving!  They taste just like a treat, but without the guilt!

What’s not to love!???

A while back I posted a recipe for Peanut Butter Chocolate Chip Protein Balls.

They are the bomb.

In fact, I loved them so much, I quickly went in search of another kind of protein ball!  I found a bazillion different recipes on the internet, but none of them were quite what I was looking for, soooooooooooooo I combined several different recipes and added a few touches of my own and came up with these!

Coconut Chia Seed Protein Balls!

  • 1/2 C. Peanut Butter
  • 1/2 C. Honey
  • 3/4 C. Chocolate Protein Powder
  • 1/3 C. Oatmeal (quick cooking oats work best)
  • 1/2 C. Unsweetened Coconut (+ more to roll them in!)
  • 1 T. Chia Seeds

In a small bowl, mix peanut butter and honey and heat in microwave for about 45 seconds.

Mix in oatmeal and protein powder.  Then mix in coconut and chia seeds.

Form into small balls and roll in additional coconut flakes.

Refrigerate for 1 hour and enjoy!

Makes about 25-28 balls.
Keep in fridge or freezer

Nutritional Information (2 balls):  Calories: 155, Fat: 8 g, Cholesterol: 11 mg, Sodium: 11 mg, Total Carbs: 15.5 g, Fiber: 2 g, Sugar: 10.5 g, Protein 7 g.

These are so yummy and quick to throw together!  If you don’t have chia seeds, I’m sure you can omit them (maybe add a little more oatmeal or something to compensate.)  But, I would highly recommend the chia!  They are so good for you and I love the little crunch they add!

I bought my chia seeds at Sunflower Market, but I know you can also buy them at Whole Foods.  A friend of mine told me she found them at WinCo and I’ve heard they are at some Smiths as well.

    These look yummy! I am presently doing low carb, however..any ideas for a low carb treat?

      Thanks so much! These protein balls are some of my favorites. If you look under the “Recipes” section on my blog you’ll see a few low-carb treats. The peanut butter cookies are dangerous!
