Chocolate Protein Pancakes

July 3, 20128 Comments

K, these pancakes are the bomb!

I love them so much.  I’ve been having them for breakfast 4-5 days a week for the past month.  I’m not sick of them yet and I don’t think I’ll ever be!

There are a million Protein Pancake recipes out there.  I’ve tried several and loved them all.  Soooo, several months ago I decided to look for a Chocolate Protein Pancake recipe.  After searching a while, I was sad I couldn’t find any that were very “chocolately!”

Most of the recipes out there just use chocolate protein powder and call it good.  Well…..that’s not good enough for ME!  I want my recipe to look, smell and taste like chocolate!

So, I decided to get creative and I came up with this recipe.

I love it.

A lot.

Chocolate Protein Pancakes
(I like to double this recipe and freeze a bunch for later!)

  • 3 Egg Whites
  • 1/3 C. Lite/Fat Free Cottage Cheese
  • 1 1/2 T. Unsweetened Almond Milk (or milk of your choice!)**
  • 1/3 C. Oats (make it a heaping 1/3 C.)
  • 1 T. Ground Flaxseed
  • 1 scoop Chocolate Protein Powder
  • 2 T. Cocoa
  • 1/2 tsp. Baking Powder

**You may need to add more liquid depending on the kind of protein powder you use.  If your batter is too thick, just add more liquid until the batter is pourable and the desired consistency is reached.**

Blend egg whites, cottage cheese and almond milk in the blender.
Add the remaining ingredients and mix well.

Pour batter by heaping 1/4 C. onto heated griddle.

Cook for 1-2 minutes until set on one side.  Flip and cook the other side until done!

Makes about 5 pancakes.

Nutritional Information (1 pancake):  Calories: 91.6, Total Fat: 2.3 g, Cholesterol: 10.2 mg, Sodium: 108.7 mg, Total Carbs: 7.7 g, Dietary Fiber: 2.1 g, Protein: 11.4 g

I love to top these with almond butter, fruit (berries and/or bananas) and a little drizzle of agave nectar.  If I’m trying to watch my carbs, I just top it with almond butter and a little sugar-free syrup.

I hope you love these as much as I do!

Are the oats (oatmeal) in this recipe cooked or uncooked?? I’m assuming uncooked, but I thought I’d double check…. cause I add cooked oats into my smoothies.

Ya, they are uncooked. I never thought about adding cooked oats to a smoothie! Sounds awesome!

Does it matter if the protein powder is whey or cassein? Does it affect how moist they are?

It doesn’t matter at all. Sometimes I have to add more liquid depending on the brand of protein I use though. I just add more almond milk (or whatever liquid) until the consistency is like regular pancake batter.

        Hey Melanie,
I tried these for the first time yesterday (my first ever protein pancake) and found them to be rather bitter. Is that just because there’s no added sweetener in it? It looked and smelled soooooooo good I was gutten when they were so bitter.

I’m sorry they were so bitter for you, dang it. I think it depends 100% on what kind of protein powder you used. Was your protein powder sweetened? If your protein powder was unsweetened or not sweet enough, then I would try adding in a tablespoon or so of stevia or the sweetener of your choice. I hope it works for you next time!!
