Well I hope you are all enjoying your Thursday. I really love Thursdays because it’s the weekend Eve. I live for the weekends!
I went to Costco earlier this week and loaded up on a bunch of wonderful things! They had some great sales going on too.
I always buy my Oatmeal ($7.89) at Costco. I just store it in a big container and refill it as I use it up.
I’ve never tried this brown rice ($13.99), but it looks great! It’s organic too. Bonus!
I’m in love with these Tortilla Land tortillas. I don’t eat them too often myself, but my kids love them! The flour tortillas were $6.49 (for 50!) and the corn tortillas were on sale for $4.59 (for 60!) These tortillas are raw, so you cook them up as you need them. They only take a minute or two to cook and they taste so fresh. They also freeze really well.
Oh, and do ya wanna know the main reason why I love these tortillas so much?? Check out the list of ingredients…
Flour Tortilla Ingredients: Wheat Flour, Water, Canola Oil, Salt, Sugar.
Corn Tortilla Ingredients: Water, Corn Masa Flour (corn, water, lime and/or cellulose gum). Contains: Less than 2% of Salt, Lime, Guar Gum.
That’s it. I still wouldn’t consider them a “health food,” but I love the simple list of ingredients so much! That’s how a tortilla should be!
Just for comparison sake, check out the ingredients in a typical Mission flour tortilla: Water, Modified Food Starch, Enriched Bleached Wheat Flour (Wheat Flour, Niacin, Reduced Iron, Thiamin Mononitrate, Riboflavin, Folic Acid), Wheat Gluten, Powdered Cellulose, Vegetable Shortening (Soybean Oil, Hydrogenated Soybean Oil), Wheat Protein Isolate (Wheat Gluten, Lactic Acid, Sulfite), and Contains 2% or less of Salt, Leavening (Sodium Bicarbonate, Sodium Aluminum Sulfate, Cornstarch, Monocalcium Phosphate and/or Sodium Acid Pyrophosphate, Calcium Sulfate), Cellulose Gum, Calcium Propionate and Sorbic Acid (to Preserve Freshness), Distilled Monoglycerides, Wheat Starch, Amylase, Tricalcium Phosphate, Natural Flavor, Sunflower Oil, Sucralose, Canola Oil, Triglycerides, Dough Conditioners (Fumaric Acid and Sodium Metabisulfite, and/or Mono And Diglycerides).
What. The. Freak.
Why in the world does a simple flour tortilla have to be so complicated!?? I definitely feel better about feeding the Tortilla Land tortillas to my kiddos.
I also loaded up on a bunch of fresh produce, of course!
I pretty much buy all these things, except for the asparagus, every time I go to Costco. I love that asparagus is in season right now! I also have to say that the Romaine lettuce has never tasted better to me! It has been so fresh and crisp. I love it!
I always buy 5 dozen eggs ($6.89) every time I go to Costco. I know I should buy better quality eggs, but I don’t. 🙂
I also decided to try the liquid egg whites ($8.79) this time. They are just 100% egg whites with nothing else mixed in. I’ve been loving them! They’ve made my scrambled eggs and protein pancakes a cinch.
I also bought some Turkey Bacon (on sale for $7.99) that I LOVE! It tastes great and it doesn’t have any added nitrites/nitrates.
I also love this mix of unsalted nuts ($16.99) (cashews, almonds, pistachios and pecans=yum, yum, yum and yummiest!)
My kids have absolutely LOVED these popsicles too. They are on sale right now for $7.99. They are full of decent ingredients and only 80-90ish calories a piece. Sa-weet.
I heart Costco SO MUCH! High quality, fresh, “real,” affordable stuff. What’s not to love?
I’ve been lovin’ all my yummy purchases this week. I’ve been making lots of wonderful salads…
This salad has been my absolute favorite…
Spinach, romaine lettuce, rotisserie chicken, cucumbers, tomatoes, red peppers, green onions, fresh salsa and guacamole. I also had some leftover sweet potato on the side. I gotta say that the green onion, guac and salsa make this salad divine! Love, love, love!
I also had some leftover sweet potato for breakfast yesterday along with a yummy egg/veggie scramble…
For dinner, I made hamburgers a couple nights ago…
I had mine without a bun, topped with cheese and pickles (I also added ketchup and mustard after I took this pic.) I had a side salad and some more sweet potato too. YUM!
I made some yummy chicken enchiladas for dinner last night. We served them with fresh salsa, avocado, romaine lettuce and grapes.
I hadn’t made chicken enchiladas in YEARS! I’m happy to say they turned out fabulous. I loosely followed this recipe, but I healthified it quite a bit. Next time I make it, I will take pics and share my version of the recipe with all of you!
Oh, and I made a couple of the enchiladas with Low Carb La Tortilla Factory tortillas for Kev and I. Here’s my plate…
We just had leftovers for dinner tonight because we had a TON! Thankfully most of my kids don’t mind leftovers so I didn’t have many complaints. Kev’s always easy to please and didn’t care either. I love that man. 😉

I also just realized that when I hit the 26 week mark, I officially enter my third trimester! Woo hoo!!! That makes me very, very happy.

I love going to Costco (and sampling food! lol) I usually go there to stock up on frozen fish and chicken. I like how they have so many great deals!

Oh, I love your cute little belly bump! You have been so busy making all that yummy food. Seriously, mission tortillas are SO disgusting…they honestly don’t even taste good either and even smell bad. Yuck! The ones you got look so much better and healthier! Hope you are getting some good rest…you look fabulous!

I got to Costco AT LEAST once a week..sometimes twice. HAHA. I always buy the same few items with the occasional new one. I used to get those tortillas, but I don’t really do wheat anymore, so I’ll have to look for the corn! That spinach, organic strawberries, asparagus and oatmeal for dayss are always in my cart!

UGH!! I HATEEEEEEE ingredients – common, lets make it EASY and just keep things SIMPLE HERE PEOPLE! I don’t know why foods need SO MANY DIFFERENT INGREDIENTS TO MAKE THEM! It creeps me out, which is why I steer clear of packaged food!

Hi, I recently came upon your blog and I’m loving it!! I have 6 kids ages 3-18, and I love to go to Power Pump at the gym (as well as Step Interval, Cycle Tone, and Cycle) too! I’m so happy you found my blog! It sounds like the age range of your kids is very similar to mine. 😉 I absolutely LOVE Highland and would love to live there. Alpine/Highland would seriously be my #1 choice of where to live if my husband didn’t work downtown. 🙁 I’m not too far from you (Salt Lake County), but we’re in the process of trying to move up to Davis County.
