I’ve been wanting to hop on here the past several days, but I haven’t had a chance. We’ve been so CrAzY!
But, I think “crazy” is the new “normal” now. 🙂
It’s tough to find time to do all the “mom stuff”, keep a sorta-kinda clean house, make healthy food, exercise, get adequate sleep AND blog about it all. Man.
Here are some pics of some of the many CrAzY things we’ve been doing the past few days….
My daughter had dance pictures on Saturday. AND, since she’s in three different dance classes, she had to show up THREE different times. Joy.
Ya, my sweet barely 12 year old daughter looks about 21 in this pic. Yikes.
I didn’t get a picture of her in her clogging costume. 🙁
Soccer season started up again for two of my boys. Yay. So, we went to two soccer games.
Here we are freezing at my son’s game…
I’ve decided I am a “cold wuss.” I hate being cold, BUT I really enjoyed watching my sons play soccer!
We went to two sessions of General Conference for our church. It’s a wonderful semiannual meeting where we get to hear motivational and inspiring messages from our church leaders. I love it and look forward to it every 6 months.
I went to the Saturday afternoon session with Kev and my 9 year old son…
And then I went to the Sunday morning session with Kev and my parents…
Loved it SO much!
We also had another birthday ’round here. Can you believe it!?? Yes, my sweet baby turned 3 on April 3rd.
I love that squishy little kid SO much, but MAN all this birthday cake is killing me. If only I had a little more will power….
We also celebrated Easter AGAIN up at my parent’s house this past Sunday. My mom does a really fun Easter Egg hunt each year and the kids LOVE it. My kids got a TON of candy. AND because I’m such a nice mom (and severely lacking in self-discipline), I helped them eat it. 😉

I gotta tell ya, March was a tough month for me healthwise. Kev and I did great with all of our Jamie Eason workouts, but I really struggled with the whole “healthy diet” part of it all. I don’t know what my problem was. I think the 3 birthdays, 2 Easters and a vacation might have had something to do with it perhaps. 😉
Why does crappy food have to taste so yummy?
BUT, now that the birthdays, Easters and vaca are OVER….I have resolved to be a MUCH better eater.
It definitely takes planning, commitment and discipline to stick with a healthy diet. I’ve learned if I don’t have a PLAN, then I end up eating whatever is convenient and then I find myself completely off the wagon.
So, I’ve decided I’m not going to have any sugar (i.e. candy, cake, cookies, etc.) for the next month. I seriously need a detox. Here are some of the healthy things I’ve been enjoying lately…
I’ve had this for breakfast everyday this week….
5 egg whites, spinach, peppers, onion, tomatoes and a little mozzarella cheese + an Alternative English Muffin topped with a little Smart Balance and homemade strawberry jam.
I’ve really enjoyed this breakfast and I’ve calculated it to be only 315 calories! Yay.
I made a really easy dinner the other night. I just roasted a bunch of frozen and fresh veggies…
Cooked up some chicken seasoned with a little lemon pepper…
And put it all together on a plate with a little quinoa and topped it with a little marinara and parmesan cheese.
I loved it. The kids weren’t huge fans, but I’d made them some ravioli as well. They liked that.
I made this for dinner last night…
Crock Pot chicken topped with a little BBQ sauce, sweet potato topped with a little honey and cinnamon and some fruit!
I also made this yummy salad to bring up to my parent’s house for dinner on Sunday (for our 2nd Easter).
I brought all of the toppings up separately and then put the whole salad together just before we served it. I forgot to take a picture of the salad all put together, dang it.
Note: I let the lettuce soak in ice water until just before we left. I drained it and then spun it dry in my salad spinner. The ice water really helps to make the lettuce fresh, crispy and cold. Yum. The toppings I put on were tomatoes, cucumber, hard-boiled egg, shredded mozzarella cheese, bacon and toasted pecans. It was a yummy salad!
I love healthy food. AND, unfortunately I love crappy food a little bit too. 😉
Kev and I also started Phase 3 of our Jamie Eason workouts this week. Woohoo. This workout plan is so freaking awesome! And, in case you didn’t know, it’s all FREE! I’m so grateful Jamie put together this wonderful program full of invaluable information.
I gotta say, the workouts are really tough! I think tough is an understatement actually. I’ve been going to the gym 6 days a week (for the most part) and I usually workout for about an hour and a half. Ya. It’s hard to find the time, but I’m really trying to see it through to the end.

I fell off the No-Sugar train after a couple of stressful weeks at work. I’m definately hopping back on that train starting tonight. I was doing so good for weeks and the cravings were going away. 🙁 At least I know I can do it again! I’m dedicating Sunday to morning yoga, meal planning and prepping!

Sugar cravings are SO hard! I always feel so good when I get the sugar out of my body….but I always wind up putting it back in eventually, lol! I love your Sunday morning yoga, meal planning and prep idea. Awesome!
