I’m sorry to say that yesterday was a very long and very crappy day.
Yep.
The kids have been out of school the past couple days for Fall Break and it’s been nice. However, yesterday was full of drama and a bunch of meltdowns.
I essentially felt like a mother/referee/psychologist/mediator/border-line nutzo all in one. It was lovely.
By 4 o’clock, I wanted to pull out every last hair on my head….and have a meltdown of my own. 😉
Needless to say, I was very happy to go to one of my favorite classes at the gym last night. It was just what I needed. I hit it hard and felt so good afterward.
It’s amazing how much exercise can boost my mood and reduce my stress level! I LOVE IT SO MUCH!!!
When I got home, we decided to take the family to Wendy’s for dinner so we could end the day on a positive and fun note.
It was great and everyone was happy. AND, did you know that Wendy’s kids meals are only $1.99 after 4 PM? Awesome.
I ordered myself a BLT Cobb salad and it was wonderful! I didn’t take a pic, but here’s one from their website.
It has 380 calories and 44 grams of protein (without any dressing.) I added a little bit of Pomegranate Vinaigrette dressing to it and it was yummy. I really wanted to order a juicy burger or snag some fries from the kids, but I DID NOT.
It was tough, but I held strong. Woo hoo.
Oh, and the kids got some fun Shrek things in their Kid’s Meals….
Classic.

I’m happy to say that I had a much better day today!! I was bound and determined to not have a repeat of yesterday, so I started my morning off with a good run.
I just ran 3 miles, but it felt great. I ran on a little trail near my house and it was beautiful! The skies were blue and the weather was perfect (~55 degrees.)
It was really sunny and I couldn’t tell what in the heck I was taking a picture of, but here are some pics I took….
When I got home, I made myself some Banana Bread Protein Pancakes and some scrambled eggs (1 whole egg + 2 egg whites.) It tasted wonderful. I topped my pancakes with a little peanut butter, bananas and a drizzle of Agave Nectar.
Later on, I took the kids to lunch, the park and the Halloween store.
We had a great time. The weather was wonderful and I wanted to enjoy the time we had during Fall Break. Everyone was also much happier today. Hallelujah!

I was recently sent a fun package full of some Cherryvale Farms mixes to try. I was sent the Pumpkin Spice Bread Mix, Cornbread Mix and Apple Streusel Muffin Mix, but they also make a Blueberry Muffin Mix, Banana Bread Mix and Chocolate Walnut Brownie mix too.
Sooo, I decided to make some Taco Soup for dinner the other night and make the Cornbread mix to go with it.
I love Taco Soup because it’s yummy, hearty and easy to make! Most of my kids like it too. I topped mine with a little shredded cheese, lite sour cream and avocado. Yum.
The cornbread was so yummy and went perfectly with the soup. It also made dinner seem a little more “special.”
Because I’m doing my “Ultra Healthy diet” right now, I didn’t have a full piece, but I did try a little bit so I could tell you guys what I thought.
It was wonderful and I loved that it wasn’t overly sweet. I think some cornbread recipes are more like cake, which is still yummy, but it doesn’t really seem like cornbread.
The Cornbread was really easy to make too. I just added water, corn and a stick of butter…
I threw it in the oven to cook while my Taco Soup was simmering and it worked out perfectly.
I love Cherryvale Farms mixes because they are quick and easy to make, and there aren’t any weird, obscure or mysterious ingredients in there! All of the mixes also include organic unbleached flour and unrefined cane sugar. Bonus.
I would still consider most of the mixes to be a “treat”, but I feel much better about feeding them to my kids knowing they are made from real, quality, “homemade-ish” ingredients.
I think I’m going to save the Pumpkin Bread and Apple Muffin mixes and make them after my “No Sugar Challenge” is over so I can really enjoy them. I only have 3 weeks left!
Oh, and you can find these mixes at most health food stores like Whole Foods. If you’re in Utah, I know they are available at Harmon’s too. I also think the packaging on these mixes is so cute that they would make a great Christmas gift for neighbors or teachers too!
Crazy that we have to start thinking about Christmas soon.

Oh my gosh, I died at those Shrek kids meal toys. SOOO good. Also, the protein count on that salad is amazing! WOW! Great job on the run, I find that a solid workout turns my mood completely around!

I totally agree with you on exercise lifting our spirits! It is a necessity we should all be doing in life…if betters us physically and emotionally! That taco soup looks delicious! So does the cornbread!

What I especially like is that the mixes are certified organic, with no preservatives or other chemical ingredients. You don’t even need eggs or milk. It’s all in there. And they’re produced locally by Cherryvale Farms in Soquel, owned by Michael and Marsha, along with daughter Lindsey Rosenberg.
