Well I hope all is going well for you guys in this crazy, Covid-19, social distancing, apocalyptic world we’re all living in!
I live in the Salt Lake City, Utah area and things are gettin’ pretty nuts ’round here! So far, things haven’t hit as hard here as in other parts of the country and I hope it stays that way. However, life as we once knew it has been completely turned on it’s head!
I drove around with my three little boys for quite a while today just so we could all get out of the house! We drove by a big shopping/restaurant/movie theater complex near us and it was just so surreal to see everything either closed or severely modified. It was so interesting to see all of the make-shift drive-thrus and curbside pick up places.
It kind of felt like an eerie ghost town.
We stopped at a couple parks for a little bit so the kids (and dog!) could run around and get some fresh air. They played soccer and football for a little bit and for a very brief moment, life felt sorta kinda normal.
It was weird though because we noticed that all of the playgrounds in our city were blocked off with yellow caution tape! It really feels like we are livin’ in some sort of communist community or just a strange version of The Hunger Games.
I went to Walmart with my daughter the other night and we thought it was so weird when an associate came over the loud speaker and announced they were closing at 8:30!??!?
Walmart!??!
Yes, the world must be ending.
It’s also super weird because almost every day each of my kids express how much they miss school! I really never thought I’d see the day.
I’m actually so grateful for all of the life lessons we are all learning right now though. It’s crazy, but it’s also quite amazing.
I just hope our country, that I love so much, can somehow land on its feet after all is said and done. Kev works in the financial industry, so he has a very clear picture of the damage that is being done to our economy. It’s frightening, really.
I’m trying to stay positive, however, and look for all of the good! It’s actually awesome to have all of my kids at home all of the time….without having any extra friends over! Ha ha! I love all of my kids friends, but it certainly adds an extra dimension of crazy!
I’m enjoying this time with my little family and I’m enjoying the extra time in general. I just hope it doesn’t go on and on and on……..
Thankfully, my three little boys (ages 12, 10 and 5) all get along famously, most of the time. They have been so sweet together and I’ve been so grateful.
They made this fort over the weekend and slept in it two nights….
It’s kind of hard to see the whole thing, but my 9 year old made his bed on top of the table, my 5 year old is under the table and my 12 year old (master fort builder) was in that blue sheet thing around the couch.
I love these sweet kiddos! Oh and BTW, we bought that fun fort building set years ago for my “master fort building” son’s birthday.
He still plays with it all the time! We got it on Amazon. You can find it here. It’s a cute set.

Well, I thought I would share a very quick and easy dinner that I made the other night.
I bought this sauce at Trader Joe’s a while ago because I thought it looked good!
In fact, as I was at the check-out at Trader Joe’s, the worker told me he loved that sauce. 🙂 I was happy to hear that.
I will say it’s a little high in calories and fat, but it’s made from all real ingredients…
So, I decided to use it the other night and it was sooooo good! It made a very yummy and healthy dinner.
I just cut up a bunch of chicken and cooked it up in a little olive oil in my electric frying pan. I seasoned it with a little lemon pepper.
After it was cooked through, I added a bunch of veggies (carrots, celery, broccoli, peppers and onions) and the sauce (I used two jars.)
I simmered everything for maybe about 10 minutes, until the vegetables were soft enough. We served it all on top of some white rice I’d made in our rice cooker.
I also cut up some apples and we had some raspberries on the side. It tasted like such a fresh, healthy meal.
Everyone loved this meal, except for my super picky 12 year old who really doesn’t love anything I fix. 🙁 Kev, my 16 year old son and I enjoyed the leftovers for a couple days too.
All in all, it was quite easy to make. It’s a little bit of a pain to prep the chicken and cut all the veggies, but it really wasn’t a big deal.
I will buy this sauce again and I will make this meal again!
Aaaaand, Trader Joe’s is probably one of the very few stores that is open right now…..so you can go out and buy some if you want to make it! Seriously a trip to the store feels like a fancy outing these days, lol!

I’m trying to keep the workouts fairly short, about 30 minutes, but last Friday’s workout ended up being about 40 minutes.
