Hey, hey, hey! I hope you are all doing well!
Life is sure interesting these days. I ran a few errands today and it felt so good to get out of the house for a bit and to be all by myself! I love my kids and family so much, but I realized that I’m hardly ever alone anymore. It felt so so nice to be by myself and just enjoy a little bit of “me time” for bit.
It’s such a surreal time we’re livin’ in. It’s always so interesting to me to see everyone wearing masks and gloves, to see all of the playgrounds and so many businesses closed and to just see all of the added safety measures everywhere!
I wore my cute mask that my friend made me and made sure to use hand sanitizer after I left each store.
Oh, and look at this funny thing our grocery store was selling…

Although there’s a lot of uncertainty and stress, I actually really, really love the slower pace and more time with family.
I’ve loved having all the kids at home, but Kev is still going into work every day. He’s is a Financial Consultant and is just doing business over the phone right now. He goes to his office, shuts his door and hardly even sees his co-workers. He said they have Clorox wipes, Lysol and hand sanitizer everywhere!
I’m glad he can still go into work because it would be so hard for him to work from home. It’s also nice because with him going to work every day, it makes us feel like we’re living a somewhat “normal” life and are still on somewhat of a schedule.
I’m grateful to be stuck at home with all my kiddos. I also love that so many responsibilities and to-dos are off of my plate too!
It’s so so so crazy, yet refreshing.
I realize that there will probably never be another time in my life when I don’t have to “do” so much. I’m trying to appreciate that and I really want to take advantage of it! I have so many house projects I’ve been wanting to get to, but haven’t yet.
I will be so disappointed if I don’t get at least some of them done, so I’m going to make it my goal next week to start doing some of them. I’m hoping to:
- clean out and dejunk my basement
- paint my bathroom
- clean out my closet
- paint my closet
- deep clean my whole house
- deep clean my van
And many, many other things!

Well this past week was supposed to be our Spring Break. It really didn’t feel much different than the past several weeks! Ha ha! I did try to make it fun though and I took my little boys out on a few random adventures.
One day my boys rode their bikes over to our church (I ran) and we brought a picnic lunch with us. They had fun riding their bikes around the church parking lot and it felt so nice to sit on the grass and soak up the sun!
It was really fun and I’m so grateful it’s spring!
Another night, a bunch of the kids were feeling stir-crazy, so we decided to head out on a walk. It felt so so so nice! The weather was perfect, there was a slight breeze and we could smell all of the beautiful smells of spring. We could also smell a few campfires that people were doing in their yards.
I’m always amazed at how nostalgic smells can be! I love the smells of flowers, fresh cut grass and campfire! <3
We also enjoyed seeing the beautiful Super Pink Moon. It was so gorgeous and my camera couldn’t do it justice!
We also saw some beautiful and inspiring rocks that people had painted and left in various places…..
I’m so grateful for good, kind people. I love seeing all of the random acts of kindness everywhere.
I also really appreciate the humor, light-heartedness, and wonderful, awesome things people are sharing on social media. It really feels like people are looking our for each other more and are more united and full of love.
I love it.
Another day, I took my three little boys to a new park, Dry Creek Trail park in Lehi, Utah.
Although the playground was closed, of course, it was still a wonderful place to wander around and explore! It’s a huge park with a beautiful creek and trail that runs through it. It also has a fun Frisbee golf course around the whole park.
My boys aren’t very skilled with Frisbee, but they had a great time trying, lol!
There were so many fun places to explore. We had a great time and my boys have been asking when we can go again!
Because it’s such a huge park, it almost felt like we were alone and had the whole park to ourselves, even though there were quite a few people there. It was great and perfect for social distancing!

Well I’ve still been doing my Live workouts on my Happy Being Healthy Facebook page every Tuesday and Friday morning. I was doing them at 10:00 AM, but I’m going to start doing them at 9:00 AM (Mountain Time) instead.
It’s been a lot of fun! I’ve been doing 30-40 minute workouts, HIIT (High Intensity Interval Training) on Tuesdays and Strength Training on Fridays.

I love working out “with” other people! You can also do the workouts any other time. I’m leaving them up on my Facebook page and I’ve been uploading them to my YouTube channel as well.
Although, they aren’t the most professional videos ever (ha!), I promise you a very, very good workout! HIIT and Strength Training are the most effective and efficient way to workout, IMO! You get a lot of bang for your buck, work all the muscles and blast the calories. Plus, it’s fun!
I’ve also been enjoying going on short runs once or twice a week. I’m not the fastest or best runner, but those short runs (~3 miles) feel so good! It feels so nice to get outside, move my body and just let my mind unwind. It’s such good mental and emotional therapy! I love it so much.
In fact, I’m going to head out on another short run as soon as I finish up this post. Spring and fall are my favorite times to run!

I thought I would also share a yummy dinner I made this week! It’s for a Cheesy Chicken Enchilada Bake from Mel’s Kitchen Cafe and it’s so so so good! Definitely a keeper!

I also made a pot of my Cilantro Lime Rice,
We cooked up some raw Tortilla Land tortillas (so good!) and filled them with some rice and some of the Cheesy Enchilada mixture and then topped it with a little salsa, guac and sour cream.
It was so good and ALL of my kids liked it, even my very picky 12 year old and my 5 year old! I was so so so surprised!
I will make it again!
