Crock Pot Chicken Tacos

I went to Costco today!  Woo hoo.  I love stocking up on healthy, yummy food.

Costco’s produce is second to none.  I love it so much.  I also love love love their tzatziki and hummus.  I put them on everything.  Also, the string cheese is the best deal around.  And oh my gosh, those “Food Should Taste Good” chips are the bomb.  I could do a separate post on those alone….and I might!

So, now my fridge is packed to the brim.  Yay!!!

I thought I’d just share a quick, easy, yummy, healthy recipe.  This recipe was inspired by my friend, Kristen.

Crock Pot Chicken Tacos

2 lbs. Chicken
1 (14.5 oz) can Low Sodium Chicken Broth
6 T. Taco Seasoning
Small Can Chopped Green Chiles, drained

Put the broth, taco seasoning and chilies in the Crock Pot and mix well.  Add chicken and mix.  Cook on low setting for 6-7 hours.  After it’s cooked, shred the chicken using two forks.

Serve chicken in hard shells or tortillas with tomatoes, lettuce, sour cream, cheese and whatever other toppings you like!!

Our kids put theirs in tortillas and I made mine into Chicken Taco Salad!  Romaine, spinach, chicken, black beans, salsa, cheddar cheese and cottage cheese.  Yum!

We used lovely paper plates for dinner.  It was awesome.

I didn’t take too many pictures for some reason.  But, it’s pretty self explanatory.  I’m sure you all know how to compose tacos. 🙂

I loved this meal because it was so so easy, fast and healthy!  All my kids loved it too.  AND….I had tons of chicken left over.  I used some for my yummy Chicken Pesto Sandwich and as a pizza topping.  I was even able to freeze some too.  Love that!

      I have the chicken for chicken tacos in the crock pot right now!! I also added a can of diced tomatoes. I can’t wait to try them!! especially because I’m so hungry right now!! Plus, I love Mexican food. Thank you for sharing.

    Tonight, we used the chicken taco meat for your Chicken Pesto Sandwiches. They were Deeeeelicious!! My husband said he’d pay $10 for that sandwich!! I had NEVER roasted peppers before, but did it – and they REALLY make the sandwich. I have just enough leftover to have one more sandwich tomorrow. Will make more Crock Pot Chicken over the weekend for more Pesto Sandwiches, tacos, and perhaps burritos. Thank you so much!! Also – GREAT idea to use Olive Oil (instead of butter) on the bread.

      Thank you! I really love these! The meat is so easy and I use the leftovers for everything….salads, sandwiches, wraps or just by itself! Yum!!
