The Best Protein Brownies

I love these brownies! They always satisfy the sweet tooth, but don't kill the diet in the process. Yay!

Serves: 20 brownies
Ingredients
  • 1 large sweet potato; cooked, peeled and mashed
  • Note: I like to poke a sweet potato 5-6 times with a fork and then cook it for 7-8 minutes in the microwave, rotating it halfway through. I then cut a slit down the middle, scoop out all of the insides and mash it up with a fork.
  • 5 eggs
  • ¼ cup coconut oil; melted
  • ½ cup unsweetened applesauce
  • ¼ cup honey
  • 2 Tablespoons water
  • 2 Tablespoons coconut flour
  • 2 scoops chocolate protein powder (~66 grams)
  • 1 cup cocoa powder
  • ¼ teaspoon all natural stevia (the kind with no added fillers….just stevia)
  • If you would rather use something like Truvia, I would recommend using 7-8 packets.
  • 1 Tablespoon baking powder
  • 2 teaspoons baking soda
  • 1 cup chocolate chips (optional, but highly recommended!)
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray a 9 x 13 pan with cooking spray.
  3. Mash cooked and peeled sweet potato very well with a fork.
  4. In large bowl mix sweet potato, eggs, melted coconut oil, applesauce, honey and water.
  5. In a separate bowl, combine coconut flour, protein powder, cocoa, stevia, baking powder and baking soda.
  6. Add the dry ingredients to the wet ingredients and mix well.
  7. Stir in the chocolate chips (optional.)
  8. Spread batter into 9 x 13 baking dish.
  9. Bake for 18-22 minutes.
  10. Enjoy!
