Peanut Butter Chocolate Chip Banana Muffins

These tasty mini muffins are gluten free, flourless, refined sugar free and AWESOME! They are the perfect little healthier sweet treat.

Ingredients
  • 1 banana
  • 1 egg
  • ½ cup powdered peanut butter
  • 1½ Tablespoon honey
  • ⅛ teaspoon 100% Stevia
  • 1 teaspoon vanilla
  • pinch salt
  • ¼ teaspoon baking powder
  • 3 Tablespoons mini semi-sweet chocolate chips
Instructions
  1. Preheat oven to 400 degrees.
  2. Coat mini muffin pan with non-stick spray or use paper liners.
  3. Place banana in large mixing bowl and mash it up well.
  4. Add egg, powdered peanut butter, honey, Stevia, vanilla, salt and baking powder to bowl and mix up well.
  5. Add mini chocolate chips and mix in well by hand.
  6. Use a cookie scoop or an ice cream scoop to place batter in the pan. Each cup should be about ¾ full.
  7. Bake for 8-10 minutes. Tops will spring back when lightly tapped when they are done.
  8. Enjoy!
