Cafe Zupas Quinoa Salad

- 1 cup quinoa, dry
- 1 can black beans; drained and rinsed
- Cherry tomatoes; quartered
- 3 green onions; chopped
- ½ red bell pepper; thinly sliced
- ½ yellow bell pepper; thinly sliced
- ¼ cup Anaheim peppers; chopped
- 1 avocado; sliced
- ⅓ cup cilantro; chopped
- Juice of 1 lemon (about 2 tablespoons)
- flavored olive oil (1 used 2-3 tablespoons)
- Salt and pepper to taste
- Prepare quinoa
- Place the beans, tomatoes, onions, peppers, avocado, cilantro and lemon juice in a large bowl.
- Mix in quinoa and drizzle flavored olive oil on top to taste.
- Add preferred amount of salt and pepper.
- Enjoy warm of cold.
