Grandma's Fluffy Pancakes

This is my mother-in-law's recipe for pancakes and they are the best ever! They are light, fluffy and turn out every time.

Ingredients
  • 2 cups flour
  • 5 teaspoons baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 1¾ cup milk
  • 2 eggs
  • ⅓ cup vegetable oil
Instructions
  1. In a large bowl, combine dry ingredients (flour, baking powder, sugar and salt.) Mix well and set aside.
  2. In mixing bowl, beat milk, eggs and oil until combined.
  3. Add dry ingredients and mix just until moistened. Do not overmix (a few small lumps are fine.)
  4. Preheat griddle (I put mine on medium-low heat) and pour batter onto hot griddle (I use a ¼ cup measuring cup.)
  5. Cook until batter starts to bubble and becomes a little dry around the edges.
  6. Flip and cook on the other side until golden brown.
