Serves: 8
- 1 pound chicken (~2½ cups shredded chicken)
- 5 cups water
- 3 teaspoons cumin
- 1½ teaspoons lemon pepper
- ½ cup onion; chopped
- 2 cloves garlic; minced
- 1 Tablespoon Olive Oil

- 3 Tablespoons lime juice
- 2 (~15 ounce) cans Great Northern white beans; drained and rinsed
- Optional toppings: Tortilla chips, shredded cheese, sour cream, avocado
- Note: You could also use leftover cooked chicken in this recipe. If you use cooked chicken, sub chicken broth for the water.

- Remove chicken from pot and cut into small chunks. Note: I used my food processor to simplify the process.
- Return chicken to broth water.
- Saute onions and garlic in olive oil.
- Add sauteed onions and garlic to the chicken/broth mixture.
- Add corn, chilies and lime juice and simmer 5 minutes.
- Add white beans and simmer 15-20 more minutes.
- Top with desired toppings and enjoy!
