Ingredients
  • 1 pound chicken (~2½ cups shredded chicken)
  • 5 cups water
  • 3 teaspoons cumin
  • 1½ teaspoons lemon pepper
  • ½ cup onion; chopped
  • 2 cloves garlic; minced
  • 1 Tablespoon Olive Oil
  • 1 (~15 ounce) can shoepeg white corn
  • 1 (~4 ounce) can green chilies; diced
  • 3 Tablespoons lime juice
  • 2 (~15 ounce) cans Great Northern white beans; drained and rinsed
  • Optional toppings: Tortilla chips, shredded cheese, sour cream, avocado
  • Note: You could also use leftover cooked chicken in this recipe. If you use cooked chicken, sub chicken broth for the water.
Instructions
  1. Boil chicken in water with cumin and lemon pepper. Boil 30 minutes.
  2. Remove chicken from pot and cut into small chunks. Note: I used my food processor to simplify the process.
  3. Return chicken to broth water.
  4. Saute onions and garlic in olive oil.
  5. Add sauteed onions and garlic to the chicken/broth mixture.
  6. Add corn, chilies and lime juice and simmer 5 minutes.
  7. Add white beans and simmer 15-20 more minutes.
  8. Top with desired toppings and enjoy!
