Facebook + a Very Easy Dinner!

Hey y’all!  I’m so excited to say that I’m FINALLY on Facebook!  Wahoo.

I also wanted to share a very easy and so NOT gourmet dinner I made the other night!

Panko Breaded Chicken and Roasted Veggies!

I made this for dinner on Tuesday because Tuesday’s are our CrAzY day!

I bought some Tyson panko breaded chicken on sale at Costco last month.  I thought it would be great to have on hand for CrAzY days.  They’re a little healthier than your typical frozen, breaded chicken.  They’re lightly breaded and don’t include any weird ingredients.  It’s obviously healthier if you make it entirely from scratch, but you can’t beat the simplicity of this meal.  AND, and my kids chowed it!

We topped it with a little Panda Express Orange Sauce and it was so tasty.  Each piece is just over 200 calories.  So, if you top it with a little sauce and serve it with a side of roasted veggies, it’s probably about a 350-400 calorie meal.  Not too shabby.

Anyway, here’s how I made everything…

Ummmm, you just rip open the bag, place the chicken on a parchment lined cookie sheet and cook according to directions!

The Yummiest Roasted Veggies EVER!

K, I went to a bridal shower last weekend and my Aunt Laura made the best roasted veggies in the world!  I asked her how she made them….and this is how!

You first decide what in the heck veggies you want to roast.
I chose broccoli, asparagus, peppers, onions and mushrooms.

Then, chop up your veggies!

Line a cookie sheet with tinfoil.  Spread out the veggies on the pan.  Try to keep them in a single layer if you can.  I made a ton of veggies (2 trays full!), so I had to overlap a little.

Spray veggies with olive oil.  Sprinkle with garlic salt and parmesan (don’t be shy!)

Roast at 425 degrees for 10 minutes.  Flip veggies and roast for another 10 minutes or longer if you prefer.

Ummm, this picture does not look as yummy as it tastes!  These are so so good!

Well, there you have it!  A fairly healthy and super easy dinner!  Yay. 😉
