Fun Stuff, Slow Cooker Chicken Stew and Homemade Onion Soup Mix

Happy Friday everyone!!

We’ve had the most beautiful weather lately and I love it so much!  It’s been right around 50 degrees with lots of sun.  It’s also starting to stay lighter a little longer at night, which I love.  I can’t wait until spring!

Yay!

I’ve also been enjoying a very yummy breakfast the past few mornings that I love…

My Favorite Breakfast Burrito; eggs, onions, peppers, bacon, celery, cheese, tomatoes and avocado

A wonderful breakfast burrito; 1 egg + 2 egg whites, scrambled with onions, celery, peppers and a little bit of bacon bits (the real kind) topped with a cheese, avocado and tomato.  YUM, YUM, YUM!

I also topped it with a little low sugar ketchup after I took this picture.  This breakfast is fantastic!  I think I could have it every morning.  Heck, it would even make a great lunch or dinner too.

Speaking of lunch, I had a wonderful lunch date yesterday with a very cute boy…

We had a crazy day running a bunch of errands, so we decided to stop at Subway for lunch.  We shared a footlong ham and turkey sub on 9 grain honey oat bread.  I topped mine with cheese, most of the veggies, mustard and vinegar.  It’s my fav.

I also wanted to share some exciting news.  I received a fun package from Nintendo the other day thanking me for completing the 30-day Wii Fit Challenge last month.

It included some cute Wii Fit socks, a Wii Fit headband, a decorative Hawaii License Plate and a Grand Canyon keychain (we completed the Hawaii and Grand Canyon challenges on Wii Fit.)

Nintendo also invited me to be a Nintendo Brand Ambassador!  So fun!  Sooo, I should be working with them on some fun things from time to time.  My kiddos think it’s very cool. 😉

I also wanted to share a wonderful recipe with you guys that I’ve been wanting to share for a while now!  It’s for Slow-Cooker Chicken Stew and I love it so much!  All my kids love it too.  I actually adapted this recipe from a Dutch Oven recipe I found shortly after Kev and I were married.  It’s obviously a keeper.

It includes Cream of Chicken soup, but I always use my homemade Cream of Chicken soup recipe.  It also includes a packet of onion soup mix, but I used a homemade version of that as well.  I will share that recipe with you guys too!

Slow Cooker Chicken Stew

Ingredients:

  • 2 pounds chicken breasts; cut into chuncks
  • 2 cans Cream of Chicken soup (I used my homemade version.)
  • 1 package onion soup mix (I used the homemade version at the bottom of this post.)
  • 1 cup carrots; sliced
  • 5 potatoes; scrubbed and cut into chunks
  • 1 1/2 cup water
Ingredients for Slow Cooker Chicken Stew: Chicken, potatoes and carrots
I “once and a halved” this recipe, so this picture shows more ingredients than normal.

Directions:

Put ingredients in the Slow Cooker in the following order:

  • One can Cream of Chicken Soup (or equivalent of homemade version.)
  • Carrots
  • Potatoes
  • Chicken
  • One can Cream of Chicken Soup (or equivalent of homemade version.)
  • Water
  • Onion Soup mix

**If you use my homemade Cream of Chicken Soup recipe, just mix the onion soup right into the soup!**

Cook 6+ hours on high or all day on low.  Enjoy!

Chicken Stew in the Crock Pot

This recipe is tasty, filling, comforting, simple and super easy to make!  I love it!

Here is the recipe for Homemade Onion Soup Mix.  I found the recipe on AllRecipes.com, but I subbed Better Than Bouillon for the Bouillon granules.  I love this recipe because all of the ingredients are real!

Homemade Onion Soup Mix

  • 2 Tablespoons beef bouillon granules (I used Better Than Bouillon)
  • 1/4 cup dried onion flakes
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon parsley flakes
  • 1/8 teaspoon celery seed
  • 1/8 teaspoon paprika
  • 1/8 teaspoon ground black pepper

Directions:

Mix all ingredients in a bowl (I didn’t mix the bouillon in because mine wasn’t dry.)

Use as a substitute for a 1-ounce package of dry onion soup mix.

**Note:  You could actually make a bunch of these beforehand and keep them in individual baggies to make it simpler to use in recipes.  If you use Better Than Bouillon, you could mix everything else in individual baggies and write “Add 2 Tablespoons Bouillon” on the bag.**

I mixed everything in the bowl and then added it to my homemade Cream of Chicken soup recipe (along with the Better Than Bouillon) for my Chicken Stew recipe…

Mixing Onion Soup Mix into Cream of Chicken Soup

    I had an omelette for breakfast myself this morning, which I didn’t have in a while…cheese tomatoes and bacon. I love the look of that burrito, I might get the ingredients and have that tomorrow. I love all kinds of wraps, I think they make the food taste so much better & interesting 🙂

    Love breakfast burritos, but I have not found any GF wraps I love yet. I am on a quest to find good ones so I can make things like that again.

    Congrats on the Nintendo ambassador position – so awesome!!
    This stew looks tasty. This is something I would make for a big “soup feed.”
    My oldest son doesn’t like potatoes – is that even allowed???? It is the oddest thing to me. He doesn’t even really like french fries or tater tots.

    I have no idea what Nintendo ambassador means but it sure sounds cool, hahaha! I’m thrilled for the warmer days too. Even though it hasn’t been as cold in Houston as other places, it’s still been too dang cold! I’m tired of having frozen toes 🙂
    So glad you seem to be feeling better in your recent posts! Yay!

      I’ve yet to find out what Nintendo Ambassador means too…supposedly I’ll be able to try out new products and attend fun events. We’ll see…. I’m SOOOO ready for spring and I’m so happy I’m feeling better too. Yay, yay, yay!!

      Thanks so much. The kids and I were excited ’bout it. 🙂 I am feeling quite a bit better. I definitely have more energy, but the nausea still hits me every once in a while. It’s SO MUCH better than it was though! I’m looking forward to feeling 100%.

      Breakfast Burritos have been tasting SO GOOD to me!! I am feeling quite a bit better and am hoping to feel 100% any day now. 😉
