Getting my Groove Back and Random Things

We’re getting ready to head out of town to sunny Saint George, Utah in a couple hours and I can’t wait!

It’s supposed to be right around 70 degrees and we plan to do some swimming, hiking and sight seeing while we’re there.  Yay!

Anyway, I’ve been trying to get my healthy groove back this week.  This week has been a lot less stressful and busy than last week….phew!

I went on a fun run last night with my 10 year old (he rode his bike) and we had a great time.

When we hit the 2.5 mile mark, I told my son, “Let’s just get to 3 miles and then head home.”  He said, “No mom, let’s keep going!”

I LOVE THAT KID!  He’s so spunky and full of a TON of energy!

We ended up running/biking just about 4 miles and headed home as it was getting dark.  It was a great run, but I could definitely feel my pregnant belly and extra weight.  It was interesting.

After last night’s run, I’m not so sure if I’ll be able to run the entire pregnancy.  I know many women run throughout pregnancy, but I’m just going to play it by ear and listen to my body.  My body felt a little bit funky last night, so I kept my pace quite slow (~10:00ish minute mile.)  We’ll see how it goes from here.

When I got home from our run, I was craving a giant salad, so that’s exactly what I made!

I can’t tell you how good this tasted to me!!  It consisted of some butter lettuce, red peppers, tomatoes, cucumbers, hard boiled eggs, rotisserie chicken, nuts and cheese.  YUM!  I topped it with some Brianna’s Blush Wine Vinaigrette and it tasted heavenly.

I’ve also been LOVING my breakfast this week.  I’ve been making this every morning….

Scrambled eggs and Ezekiel toast

1 whole egg + 3 eggs whites scrambled with some onions, peppers and spinach and topped with a little cheese and tomatoes.  I also served it with a slice of Ezekiel Bread pan fried in a little olive oil.  I could eat this every day!

Oh, and this was a weird lunch I had today.

PB and Honey sandwich with apples and bananas

Half of a Peanut Butter and Honey sandwich along with some apples and bananas.  This totally hit the spot.  My boys requested PB and Honey sandwiches for lunch, so I decided to have one too!

I have a couple more random things to share.  First off, I got some new maternity clothes!  I went to the Motherhood Maternity outlet and I have to say I was a little bit disappointed.  They didn’t have a huge selection and their prices were so-so.

I thought the outlet would have some good deals, but the lady who worked there said the outlet is just like the regular store except they have more clearance items.  Lame.  The clearance items were all scary winter stuff too, btw.

Anyway, I got a few things there and I bought a cute Old Navy t-shirt online.  I’m planning on going to an actual Old Navy store soon.

Fun!  I definitely need to go shopping again and find some more cute things.

I also have to share my new favorite Cottage Cheese with all y’all…

I love Daisy Cottage Cheese

Daisy Low fat Cottage Cheese.  I’ve bought Wal-mart brand cottage cheese for years, but it wasn’t until recently that I realized it included a whole bunch of weird ingredients!  I’m a big label reader, but for some reason I didn’t think to read the cottage cheese label.

Anyway, I read the label on the Daisy cottage cheese and I was so impressed!  It’s so simple and only has 4 ingredients!  I was also happy to see that it didn’t include Carrageenan, a controversial ingredient extracted from seaweed that’s used as a thickener in many food items such as milk, yogurt and cottage cheese.  There’s no clear cut evidence that it causes harm, but it seems a little iffy to me.  I try to avoid it if I can.  Here’s an article I read about it if you’re interested.

Oh, and I LOVE cottage cheese!  I eat it all the time with fruit, mixed in my yogurt, on salad or with healthy crackers.  Yum.

Well, I gotta go finish packing so we can get the heck outta Dodge!  I hope y’all have a fabulous weekend!

    St. George is a fun town to visit. I had chicken pot pie and blueberry pie from Croshaw’s Pies there after the marathon last October. I’ll have to check my favorite cottage cheese, HEB (Texas brand), for carrageenan. Thanks for the info!

    Have a fun get-away!!! Glad the weather is gong to be nicer.

    That salad combo sounds great, yum, I love cashews!! And that’s so interesting about cottage cheese, I eat almost every day for snack, so I’m definitely going to be looking into the labels. Thanks for the tip!
