Great Food and A Wonderful Scout Program!

Hello friends!  I hope you are all having a fabulous day.

This morning, I really wanted to make Chocolate Protein Pancakes for breakfast, but I was all out of cottage cheese. 🙁  As I was searching in the fridge, I saw a big ol’ container of plain Greek yogurt, so I decided to use that instead.

I’m happy to say they turned out great!  They were a little flat and weren’t quite as fluffy as the original recipe, but they tasted just the same.

I decided to top mine with a little natural peanut butter, bananas and sugar-free syrup.  I also sprinkled a little bit of unsweetened coconut on top.  I LOVE protein pancakes!

My 3 year old wanted some protein pancakes as well, so I fixed him some just like mine…

He loved them so much and told me I was “the best mom he ever had!”

I’ve also been on a big salad kick lately.  On Sunday I chopped up a bunch of salad fixin’s and let everyone do whatever they wanted with them…

I topped mine with a little Brianna’s Poppy Seed Dressing and it tasted wonderful.

I also cut up some peaches, bananas and carrots and we snacked on those too.

I’ve been enjoying the salad fixin’s all week and have had a salad for lunch today and yesterday.  Yum!Two big giant salads!

Today I topped my salad with a leftover Turkey Burger that I had in the freezer and it was great!  Yesterday, I intended to eat that half of banana too, but I was SO STUFFED when I finished the salad that I skipped the banana.

I must say that the ham, hard boiled egg, and avocado make this salad divine!  Yum.

I also made the BEST Chocolate Peanut Butter oatmeal yesterday!

Extra Creamy Chocolate Peanut Butter Oatmeal

I just made my typical recipe, but I added a little bit more water after I took it out of the microwave and a little bit more cocoa.  It made it so rich, creamy and chocolatey!  I also topped it with an extra big glob of peanut butter.  The oatmeal was still quite warm, so the peanut butter melted a little and tasted just like heaven.

So Dang Good.

I also made a yummy and easy dinner the other night that turned out great!  We made a healthier version of Taco Bell Chicken Quesadillas and everyone loved them!!

I’m short on time tonight, so I will share the recipe tomorrow.

I’m actually getting ready to head to Salt Lake City tonight to see a wonderful program that my cute 10 year old son is in.  The purpose of the program is to commemorate 100 years of scouting in Utah and my son will be singing with a GIANT Cub Scout Choir.  They are also singing with the Mormon Tabernacle Choir and it should be wonderful!

    Oh man, you’re killing me with that peanut butter oatmeal again, haha! I swear I have never put peanut butter in my oatmeal, just cocoa, but I really need to try that in the morning! Those salads look awesome too.

      I know you would love it! It definitely packs some calories, but I’ve started putting a little less protein powder in to compensate. It’s Daaaannnnggg good!

    Love these salad ideas we have a home made “salad bar” once a week, I love some of the suggestions you have made that we can add to our “Salad Bar”. Thank you!

      I love the once a week “salad bar” idea. I may have to adopt that. My kids won’t be thrilled, but I know it’s so good for all of us!
