Well folks, I have a yummy, yummy recipe to share today!
In fact, I have SO MANY recipes that I’ve been wanting to share on this blog, dang it. Sadly, I haven’t been able to blog as often or as regularly as I would like to…..for a long time now. 🙁
Life has always been crazy and I’ve always been a busy person, but MAN, I believe I am in the “peak of my crazy motherhood experience” right now. It is straight up nuts. I love it though and I cherish every single day.
I still have all six kids living under my roof, which I know will all too soon not be the case. I’m sure my heart won’t handle that very well. Also, because we did have six kids and we spread them out a bit, I’m dealing with the craziness of teenagers and the exhaustion of keeping up with a toddler.
Right now I am in the peak of laundry, dishes, messy house, cooking, driving kids all over heck and back, homework, playing referee, psychologist and all of the zillion other mom duties.
I love it though and I feel blessed to be able to do it. I know that one day I will look back and long for these days. I really do try to soak up each moment and scoop up my kids and just love and squeeze the heck outta them while they are still my babies.
But somewhere aside from all of the mom duties, I still like to spend a little time to myself occasionally. I love like to exercise. I love to experiment with healthy recipes. I love to read. I love to chill out with the hubs. AND I love to blog.
Sadly, blogging has made it’s way further and further down my priority list. 🙁 It makes me sad, but somethin’s gotta give. On a positive note, I do believe in the next year or two I will be able to ramp it back up to “full legit blogger” status once again! Woot!
Anyway, with all that being said….that is why I have so many recipes I’ve wanted to post and haven’t!
Oh, and HEY, I am pretty good and pretty consistent at keeping up with Instagram stories! I always have so many random thoughts going on in my head and things going on in my life and Instagram stories makes it so easy for me to share them! Soooo, you can follow me there if you care to!
Anyway, the recipe I have to share today is so dang good! It’s for Grilled Zucchini Pizzas and I seriously could eat them every day. It really seems like every time I make them, I cannot believe how good they are! I really could eat a whole plateful!
I wish I could’ve shared this recipe a month or two ago; in the thick of the gardening season. But, I figure….better late than never!
I also want to say that I’ve experimented with this recipe in my oven (on broil) and although it’s still good, it DOES NOT EVEN COMPARE to how good it is on the actual grill!
It’s like comparing store-bought cookies to homemade….no comparison.
Soooo, I promise it’s worth the extra effort to make them on the grill!
Ingredients:
- 3 regular sized zucchinis or one large; cut into 1/4″ thick slices
- 3-4 roma tomatoes; sliced (you can also sub marinara sauce, but the grilled tomatoes are soooo good!)
- 2-3 ounces sliced mozzarella cheese (I sometimes use string cheese strips with good results!)
- Turkey Pepperoni slices (one for each zucchini pizza)
- 2 Tablespoons butter; melted
- 1 clove garlic; minced
Directions:
- Preheat grill to medium heat.
- Melt butter in microwave. Mix in garlic and set aside.
- Place zucchini slices on grill. Brush garlic butter on the top of each one.
- Cook on the grill for a few minutes and then flip zucchini slices over.
- Top each slice with a tomato.
- Then top each “pizza” with cheese (shredded is hard because it is messy! I definitely recommend slices.)
- Place a pepperoni on top of each “pizza.”
- Turn the grill heat down to low and cook for a few minutes until the cheese melts and browns a little. You can also turn the grill completely off and just let the pizzas sit on the grill with the top closed until the cheese melts.
Enjoy!!

I made these the other day out of some very small zucchinis that I had (the last from my garden!) I decided to slice them in strips since they weren’t very big in diameter. I cut the tomatoes into a similar shape and tore the pepperonis in half. It worked out great!
You really can’t mess this recipe up! I hope you all enjoy it!
