Happy Friday everyone!  I LOVE LOVE LOVE LOVE Fridays!!!  Except they make me want to eat yummy, bad food to celebrate!  Dang.

We had a fun Valentine’s date night.  We got some yummy Greek food from Apollo Burger.  Quick side note, I don’t know if it’s just a Utah thing or not, but why do all the “fancier” hamburger joints sell Greek food too????

Weird.

I don’t get it, but I’m not complaining because I love Greek food!  Kev and I shared a giant Gyro salad (basically a Greek salad topped with Gyro meat) and I got a Chicken Souvlaki (awesome grilled chicken on a skewer) on the side.  It was very tasty.

We also went to the movie, The Woman in Black.

Holy FREAKY show!  I was on the edge of my seat the whole time and I had to watch the majority of the movie with my eyes squinted.  In fact, I didn’t even dare drink my drink because I was afraid I would jump and spill it all over.  Awesome.

It was a great show though.  The acting and storyline were great.  Daniel Radcliffe was perfectly cast.  However, Kev and I kept saying he should have used some of his Harry Potter magic to woop the Woman in Black.  That would have been awesome.  I also liked that it was suspenseful, but not gory.  I’m so not into gory, violent movies.  Blah.

So, it was a fun night.

Quick update on my low-carbness.  I’m still doing great.  I’ve been a little bit lax today (must be Friday), but still not too bad.  I’m still eating my same 4 egg white omelet with a side of peanut butter low-carb toast every morning.  I’m also still snacking on nuts, string cheese, random turkey/chicken, veggies and peanut butter.  But, here are a few other things I’ve been eating….

Low carb turkey wrap! Low carb tortilla topped with turkey, a little shredded cheddar, romaine, peppers, tomatoes and tzatziki!

For dinner last night, I pulled out some leftover pulled pork from the freezer (love that!) Kev and the kids had pulled pork sandwiches and I had a pulled pork salad! Yum! Spinach, romaine, peppers, tomatoes, celery, olives and pork all topped with a little lite Ranch!

I hope you are all doing well!  It’s time to kick up the exercise and healthy eating!  Spring is on the way!  Woo hoo!!!

    HERE HERE for eating low carb, ha ha ha! I have been eating VERY low carb for… man like 15 years now, and I feel so good. The best part is since I pretty much know all the foods that I can eat, there is absolutely no guess work involved and I totally feel unrestricted (within my boundaries… does that make sense? lol). Good luck this weekend, not too many high high carbs now, lol! Roast some butternut squash, oh man, super delicious!!

      Wow, 15 years! That’s amazing!! Low carb is hard, but it sounds like you’ve just made it part of your life. That is inspiring!!
