Healthier Macaroni and Cheese

K, I told y’all I made homemade Mac and Cheese the other night.  Yummy, yum, yum.  I really love it.  It’s fairly quick and easy to make and most of my kids love it too.

It’s actually my mom’s recipe.  She made it for us when we were kids and it was one of my favs!  I just substituted healthier ingredients for everything.  It still has cheese (of course!) and a little butter, but I guarantee it is 10 bazillion times better for you than anything you can buy in a box!  Blah.

So here ya go…..

Healthier Macaroni and Cheese

1 1/2 C. uncooked macaroni noodles (I like to use whole wheat pasta, brown rice pasta or any other healthy kind out there)
2 T. flour (I used whole wheat flour)
1/2 tsp. salt
dash pepper
3 T. butter
2 C. milk; warmed (I used skim)
1/4 C. onion; minced (I’ve also used dried onion with good results)
2 C. cheddar cheese; shredded

Cook macaroni according to package directions and drain.

Mix flour, salt and pepper in a small bowl and set aside.

Melt Butter in a saucepan on top of stove.

Add flour/salt/pepper mixture and stir until it forms a little “paste.”

Slowly add the milk a little at a time.
Note: make sure the milk is warmed before you put it in.  I just pour it in a two-cup glass measuring cup and warm it in the microwave for a minute or two.

After all the milk has been added, stir until the sauce thickens a little.
Add the onion and cheese.

Stir until cheese is melted.

Pour sauce into baking dish on top of pasta and mix together.

Bake at 350 degrees for 45 minutes or a little longer
(I cook it until it is golden brown on top and bubbly!)

I made broccoli and corn for the kids to have on the side.  Kev and I had broccoli and some of Jamie Eason’s Turkey Meatloaf Muffins that I had in the freezer (topped with Tzatziki, of course!)  I will post the recipe for the Meatloaf Muffins w/ pictures sometime too (I love them!)

    Will try this someday. I love mac & cheese too but never want to get too close to the box kind. Thanks for this!
