Well, I’m still draggin’ a bit, but I think I’m slowly, but surely improving! Hallelujah! Kev let me sleep in for a little bit this morning and it was very, very, very nice!
I’ve decided I really don’t have time to be sick (do any of us!??) My “to-do” list has come to a screeching halt, my eating has been “random” and my exercise just isn’t happenin’. It makes me sad. I miss my oomph. It’s also amazing how quickly my house turns into a tornado wasteland when I’m not constantly doing all the “mom stuff.” Mom’s just can’t have sick days. Bummer.
On a sweeter note, the other day my squishy little 21 month old baby opened my oven drawer, pulled out a cooling rack, brought it to me and said “toochies” (baby language translation, Cookies.)
It was so cute, my heart melted.
But then I thought, Daaaaang, I want “toochies” too! But, I am a recovering addict and I can’t have them!!
Daaaaaaaaaaang!
So, I did a quick search on the internet and found a great, yummy recipe on Shape.com that satisfied our “toochie” craving. I loved it because it had no sugar (other than the chocolate chips!) and was loaded with lots of good stuff!

I changed it just a little bit. The original recipe seemed a little funky because it listed cinnamon twice (once at 1/2 tsp. and once at 1 T.), so I just cut out the 1 T. one. My cookies also look nothing like the picture on Shape.com, so I don’t know if the recipe was missing an ingredient or what. It’s “all good” though because the cookies turned out yummy!

Here’s the recipe with my changes….
Pumpkin Chocolate Chip Protein Cookies
(adapted from a recipe from Shape.com)
Ingredients:
1 c. pumpkin puree
1/4 c. applesauce
(I used homemade, but you could use any “no sugar added” variety)
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1/4 c. vanilla protein powder
1 tbsp. agave nectar
1 tbsp. molasses
(I didn’t have molasses, so I just used another tbsp. agave…you could use honey as well)
2 c. rolled oats
1/2 c. raisins
(I used chocolate chips instead of raisins….I need the antioxidants!)
Directions:
Preheat oven to 300 degrees.
Combine ingredients in a bowl, stirring until well combined.
Drop cookies onto baking sheet and press down.
Bake for 15-20 minutes.
I know they look a little funky, but they are good! Oh, and I strategically picked the ones with the most chocolate chips….just for the antioxidant benefit of course!

These were very good. I intended to eat 2, but I think I had 5! They were small though. I really loved them. They weren’t as sweet as a normal cookie, but considering all the healthy ingredients, I thought they were the bomb!
I think this would be the perfect late afternoon “pick me up” snack. It feels indulgent, but there’s tons of healthy stuff smooshed in there! Woo hoo.
Oh, and my baby loved them too. My 3 year old said they were “disgusting”, my 8 year old was afraid of them and didn’t try them, my picky 13 year old said they were “not bad” and my 10 year old daughter loved them!
I loved them and since I appreciate their health benefits, I’m going to freeze them and eventually (or tomorrow) eat them all myself!
