Healthy Food and Progress!

Right now, we’re smack in the middle of my daughter’s 12 year old birthday party!  So, there are 8 cute little giggling girls running ’round the house. 😉  They’re now getting ready to watch a movie, so I thought I would hop on here and write a quick post.

Other than the cake, I’ve had a great week health-wise!  So far, I’m lovin’ Jamie Eason’s Live Fit Trainer!  I actually enjoy weight training and it is such a great workout!

I realized that the classes I usually go to work all the major muscle groups, but don’t really focus on any of them.  So, I end up getting a great workout, but don’t really improve in any one area.  Make sense?

What I love about Jamie’s workout is that it KILLS 1-2 major muscle groups in one workout and then KILLS different muscle groups the next day.  By the end of the week, I’ve fully and completely worked most muscles in my entire body to a pulp.  Sweet.

I also lift differently in the weight room than I do in my classes.  In my classes, we really only use dumbbells and barbells.  They are awesome, but I love using the machines and other options in the weight room.  I’ve definitely been working my body differently this week.

Note:  In Kev’s defense, he’s lifting really light right now.  He’s been running a lot, but hasn’t been weight training.  So, he’s starting slow.  This workout has been kicking his can, btw!

Anyway, I know this is just what my body needs right now. 😉

AND, I’ve lost 3 1/2 pounds this week!  Wahoo!  I am now at my pre-Christmas weight and I’m very happy about it.  I’m not stopping either.

I’ve really been watching my diet this week as well.  It’s been tough, but I love it.  I know that in order to be successful with healthy eating, I need to be 100% mentally committed!  I’ve really tried to THINK about everything I eat.  I’ve also tried to focus on just eating until I’m not hungry anymore, not until I’m full.

I’ve also tried to eat very small meals.  I’ve been on an egg kick lately and have been having eggs every day.

I’ve been loving this lately…

I buy the Ezekiel bread at Health stores (Harmons, Whole Foods, etc.) and I buy the Dave’s Killed Bread at Costco.  Love it.

I also paired my egg toast with a salad for lunch the other day.  Super yum.

I also made this yummy egg concoction for breakfast yesterday,

I just scrambled 5 egg whites with peppers, sauteed onion (super yum!), olives, turkey and spinach.  Then I topped it all with a little salsa.  I also had half an apple on the side.  This was SO GOOD!  The sauteed onions made all the difference.

I’ve also been on a big protein pudding kick lately,

I’ve had one almost every day.  In fact, yesterday I changed it up a bit.  I mixed a raspberry Chobani with one scoop vanilla protein powder and one tablespoon Stevia and it was delicious!  It reminded me of cheesecake!  Sorry, no pic. 🙁

I’ve been loving protein pancakes too.  Since I’ve been trying to eat LESS, I’ve been having just one at a time.  I like to make one in the morning when I’m getting the kids off to school (I pull a pancake out of the freezer) or I enjoy having one for lunch or as an afternoon snack.

I topped this one with a little natural peanut butter, blueberries and sugar-free syrup (Log Cabin tastes the best, IMO.)

The other night I made a super yummy dinner too.  I made quinoa burgers with sweet potato chips.  I loved it!  My kids were a little skeptical, but they didn’t HATE it.  That’s a win in my book.

Both of them were pretty easy to make and the quinoa burgers were a great way to use up leftover quinoa!  I enjoyed the sweet potatoes for lunch the next day too.

This post is already long enough, so I will share the recipes in a  different post.  I will definitely be making both of these again!

    I hear Jamie Eason’s program is no joke! Good luck with that!

    Absolutely LOVE sweet potato fries. They are amazing fried in coconut oil.. yum!!
