Well I’m happy to report that after much kicking and screaming, I finally got my 5 mile treadmill dreadmill run in the other night.  I really was not looking forward to hopping on that thing, but I got’er done!  Yay!

I don’t know why I dread the treadmill so much.  I just really really love running outside, I guess.  It seems like when I’m on the treadmill, I can’t stop looking at the display.  I keep thinking, “How much longer?”, “How much further?” and “When will I be off this dang thing??!”  On the flip side, when I’m outside my mind is able to unwind and I find myself thinking of everything except running.  I consider my outside runs almost as good as therapy.  Love it.

However, in the treadmill’s defense, I’m very grateful to have options.  When the weather is yucky or it’s dark outside (I don’t want to run in the dark by myself!), I’m grateful for my little treadmill.

I actually ended up running 5.2 miles in 43:34 minutes (8.22 pace).  I felt good and it really wasn’t that bad.  I was definitely glad I did it.

So, my eating has been a little random, but I thought I would share a couple things I’ve been eating the past few days.  I’ve pretty much had the same thing for breakfast most mornings.  It’s been my 1/3 C. oatmeal mixed with 1 T. flax, 1/2 scoop protein powder and blueberries.  I’ve also had 4 scrambled egg whites mixed with various veggies.

I’m a pretty boring breakfast person.  When I find something I like that works, I just stick with it for a while.

I’ve found myself having a lot of small snacks throughout the day instead of a typical lunch.

I love bananas with peanut butter!

I really love this snack….so much! 1/2 C. Cottage Cheese with Kashi Pita Crisps.

Cinnamon Cottage Cheese Peanut Butter dip with apples

I love this dip!  I just mixed 1/2 C.-3/4 C. Cottage Cheese (I eyeballed it) with 1 T. Natural Peanut Butter in the blender and topped it off with a little cinnamon.  I dipped some Yellow Delicious apple slices in it and it was divine.

Mint Chocolate Chip Protein Shake.

 This shake is the bomb.  I know the mini chocolate chips are a little indulgent, but they made the shake so so yummy!  Here’s what’s in it.

  • 1 C. Unsweetened Almond Milk
  • 1 scoop Vanilla Protein Powder
  • 1 T. Ground Flax Seed
  • 1/4 C. Lite Cottage Cheese
  • 2 big handfuls baby spinach
  • a couple drops peppermint extract (not too much!)
  • 1+ T. Mini Chocolate Chips
  • 6-7 Ice Cubes

Throw it all in the blender and mix it up!

Well that’s some of my latest snacks!  I was a little bit of a slacker “dinner maker” last week.  We pulled stuff out of the freezer a couple nights and one night Kev said, “Ya know, I’m not really that hungry because I had a late lunch.”  So we decided to have protein shakes for dinner that night and I made the kids quesadillas.  Easy and everyone was happy.  Love it!

    It all looks so yummy. I see you used almond milk in your protein shake. My friend was telling me how she likes almond milk and saves so many calories but I’m afraid of the big switch. I lovey milk! But won’t hurt to try

      I really do love almond milk! It’s only 35 calories/cup and milk is ~100+ a cup! I’ve even enjoyed my protein shakes with just water too!
