Man, we’ve had a busy week!! I’m actually glad it’s coming to an end. 🙂
One fun thing we’ve been doing is painting our upstairs. It has been loooooong overdue!! We’ve lived in our house about 9 years now, but we’ve done very little updating or legit decorating. When we first moved in, I was 9 months pregnant and had a baby two weeks later.
Aaaaaand we’ve been crazy ever since. We’ve seriously just been in survival mode.
So, I’ve decided it is TIME to dejunk the entire house, clean everything, paint everything, new carpet everything and make things “cute.” It might take me a while and I’m sure it won’t be cheap, but I’m slowly, but surely going to do it! Cleanliness, organization and pretty stuff make me happy. 🙂
Kev told me I was the craziest painter he’s ever seen, meaning that he doesn’t know how I always get paint all over me! Ha ha! I told him it’s because I know how to git ‘r done!
I’ve been finding paint in my hair all week long. Oh, and I was drinking one of my protein shake concoctions in that pic. Yum!
I thought I’d share a few more things I’ve been eating this week.
I was happy to have an almost empty jar of peanut butter the other day so I could put my oatmeal in it. Yum!
It’s one of my favorite things! I also had a side of scrambled egg whites topped with ketchup.
For my oatmeal I just mixed up 1/3 cup of oatmeal with some water and cooked it in the microwave for 1 minute 45 seconds. I then mixed in 1/2 scoop chocolate protein powder, a spoonful of ground flaxseed, a splash of unsweetened cashew milk, a splash of almond extract and then poured the hot oatmeal into that peanut butter jar. So dang good!
I also came up with this lunch the other day, which was awesome and filling.
This was just some leftover “Harry’s” Organic Tomato Soup from Costco that I heated up and put some leftover cooked chicken in it.
I always have a stash of cooked chicken in the freezer. I like to cook up a batch of chicken every week and if I don’t finish it within 3-4 days, I put what’s left in the freezer. It works out great and makes meal prep so simple!
This soup is great and full of “real” ingredients, but it did have a lot of fat in it (cream and butter.) One cup runs about 250 calories, 18 grams of fat, 18 carbs and 3 grams of protein. Not terrible, but it’s definitely high in the fat department.
Costco sells a lot of great soups, but there are definitely others that are lighter. It did make for an easy lunch though!
I also made Indian food for dinner this week for the first time ever. About a month ago, we went to dinner at The Bombay House with some friends of ours. It was soooooo good!
We all ordered the same thing, the Chicken Tikka Masala, at the recommendation of our friend. We all loved it! Soooooo, I decided to search for a recipe on the internet so I could make it at home! I found this recipe on the internet and it was great!
I did tweak the recipe a bit. I didn’t use all the spices and I subbed some Half and Half and skim milk for the heavy cream. It turned out great.
We decided to serve ours atop quinoa. I also bought some mini Naan bread at Costco, brushed it with butter, sprinkled it with garlic powder and parsley and toasted it in the oven.
It was great and yes, I had a piece! I really don’t eat that much bread, but I decided I needed a piece of that. 🙂
I also enjoyed the leftovers for two days afterward. It actually worked out awesome because I had it on my two low carb days (Wednesday and Thursday.) The first day I just heated up some leftover veggies and topped it with the Tikka Masala…
I know that looks a little nasty, but it was great!
The next day, I steamed some broccoli in the microwave and topped it with the Tikka Masala. Super easy and sooooo good!
I’m sure I’ll make it again, but I want to simplify the recipe a bit.
I also enjoyed my “reset” day yesterday! It was fun. I try to keep it healthy all day long, but then I like to have one indulgent meal. I also snitch a few more things than I usually do throughout the day like some Goldfish crackers, chocolate chips and popcorn. I don’t eat a lot, but it’s so nice to snack!
Kev and I decided to go out for a burger and sweet potato fries at Cubby’s last night and we loved it.
It’s not exactly “healthy,” but I love that Cubby’s uses such high quality ingredients. They are awesome!! Oh and we got two different kinds of burgers and shared them. It was perfect.
Well I’m happy to say that I’ve been messing around with the Healthier Muddy Buddy recipe that’s in the Extreme Transformation book and I’m loving it.
I love their original recipe, but it seemed to have too much honey in it. I also wanted to see if I could make it a little bit lower in calories and add some chocolate to it….just a little!
I really like the changes. I’m still messing with it a bit, but I’ll share the recipe ASAP. It’s so nice to have a little somethin’ somethin’ that’s sweet and crunchy, but not super unhealthy either. I only have this on my reset day though.
Well, I think that’s all I got today! I will share a funny story though. Mmmmmkay, about a month ago I found this awesome Dot-to-Dot book at Walmart and I decided to get it!
There are some very advanced Dot-to-Dot’s in it and I knew my bigger kids would enjoy them. I also thought it might be nice to throw it in my church bag so my kids could quietly work on a Dot-to-Dot instead of messing around on their phones during church.
Oh, and since the Dot-to-Dots are so advanced, you can’t tell what the picture will turn out to be. I laughed my head off when my 13 year old finished his first one and showed me…
What in thee heck!???! I would have never imagined there would be a fetus Dot-to-Dot. It was so funny. THEN, my son decided to turn it over to the other side and work on the Dot-to-Dot on that side.
Aaaannnd here’s how that one turned out….
Bwahahahah! I was like, “Heck yes, this is the perfect thing to do at church!” Too funny. There’s actually been a lot of other random and weird Dot-to-Dots in that book, but it kind of makes it fun. You have NO IDEA what it will end up being.
