Happy Monday! First off, I’m having a bit of a tough time blogging today because of this dang cute kid…
What a cutie patootie. He keeps bringing me his Jessie doll saying things like, “Mom, you be Jessie.” and “Play with me.” How cute it that!? So, I’ve been taking a few “Jessie breaks.” What a sweet pea. I just love him so much!!
Anyway, I thought I would check in to let you all know how my New Year’s goals went this past week…
I officially give myself a B+ for effort and a D for results! 🙁 I worked really hard all week, but I didn’t lose a single pound…in fact I gained a pound. Ya. However, I’ve learned time and time again that sometimes my body is just whacked. I know I have to be patient. In fact, this quote sums it up nicely;
Regardless of what the scale says, I know I’m taking good care of my body. Hopefully my body will acknowledge my hard work and send me a big Thank You note in the form of GOOD RESULTS! We’ll see.
Here’s an overview of my goals this past week;
- I ate really well. I didn’t have any treats at all (yay!) and I definitely ate more fruits and veggies (double yay!) It was tough at times though. We went up to my parent’s house last night and there were brownies, ice cream and candy! Everything looked so good! Afterward, we went to my sister’s house for a bit. She made sugar cookies and they looked so yummy. It was tough. BUT, I just stuck to my guns.
- I was only able to exercise 5 days (not 6), but it wasn’t for lack of trying! I didn’t exercise on Friday because it was SUCH a crazy day and I was beat! I was pretty much mommy-chauffeur all day long and I just knew the exercise session wasn’t going to happen! I did have a lot of good workouts this week though and was able to run twice. I’ve really missed running and it’s be so nice to get back at it!
- I was super lame at flossing my teeth this week! I think I did it twice. Ya know, it only takes a minute to do, so why is it so hard to get it done??
- I was kind of lame in the sleep department too. I probably got 6-7 hours most nights. I’ve learned that I just don’t do well with less than 7 hours. I definitely need 7-8, or I just fall apart.
Even though I didn’t kill it on all my goals this week, I am NOT giving up! I know I need to recommit myself every day. I’m definitely going to work on the sleep thing this week because I know all my other goals will be extra hard to accomplish if I’m sleep deprived.
Here are a few things I’ve been eating the past couple of days;
Chocolate Protein Pancakes. I love protein pancakes SO much! I had them for breakfast, lunch and dinner at different times last week. I usually have them topped with a little peanut butter, fruit and a drizzle of agave nectar. I also love to have them with a side of scrambled egg whites topped with low sugar ketchup. Yum!
Coconut Chia Seed Protein Pancakes
I had a veggie egg scramble for breakfast this morning. 1 whole egg+4 egg whites scrambled with onions, peppers and spinach and topped with a little cheese and chopped tomato.
We had this for dinner the other night, Taco salad! The kids all had tacos and I made mine into a taco salad. Romaine, turkey taco meat, fat-free refried beans, salsa, olives, guacamole, a little shredded cheddar and lite sour cream.
Well, that about sums it up! I’m getting ready to head out to my fav Boot Camp class. Fun, fun. I hope y’all have a fabulous Monday!

Eating healthily and exercising are a couple of my (many) resultions for 2013 as well. It is hard to do and I hope that I can see some results before I give up. Those pancakes look fantastic and I will be sure to try them when I can.

Good luck with your resolutions Jane! It is so hard, but I KNOW you will see results if you just keep at it. One of the keys to success for me is finding really yummy, yet healthy food options! These pancakes are a perfect example of that. I could eat them every day and never get sick of them. They taste like a treat too! They remind me of strawberry shortcake or something. It definitely helps to make eating well easier!

They use coconut flour, which is a little hard to find (Whole Foods has it), but it’s such a healthy flour. I love chia seeds and am always finding ways to add them to things. I add them to protein shakes, salad, protein balls and even peanut butter toast! Good luck!

Thanks so much for leading me to your pancake recipe. I ordered some chia seeds from an online health store, Vitacost.com. We don’t have alot of stores around here. Thought I might mention it in case anyone else needs to purchase some healthy ingredients!

I love veggie egg scrambles! They are such a great way to add a whole bunch of veggies to breakfast (or whatever meal!) I’m sorry you can’t make them in the dorms though. 🙁
