I went to one of my favorite “Power Flex” classes at the gym this morning.  Love it!  I grabbed two Peanut Butter Protein Balls as I was running out the door.

I stuck them in a little Ziploc sandwich bag and intended to eat them while I was driving.  But, for some reason I wasn’t even hungry, so I decided to save them until after my workout.

I’m so glad I did!

When I got out to my car, my yummy little protein balls were hot and melty!!  Sounds gross, but HOLY COW they were good!  I was glad they were in a Ziploc though, otherwise they would have been a mess.  They seriously tasted like an indulgent treat.  I’m going to bring protein balls to leave in the car from now on!  YUM!

I’m weird, I know.

When I got home, I made myself a yummy omelet.

1 whole egg, 3 egg whites, Mrs. Dash, peppers, onions, spinach, ham and feta cheese!  I topped it with a little homemade salsa.  Super yum.

I was especially happy because I was able to use spinach from our garden!  Yay!  I’m so excited….I love garden season!  I love to eat fresh, organic veggies straight from the backyard!

Note: I have to give Kev a quick plug.  He is our mega gardener.  I just help out and do whatever he tells me to do. 😉  I definitely do my part with eating all the yummy things though!

For those of you who are gardeners, you know how satisfying it can be.  For those of you who aren’t gardeners, and are intimidated by it….I’m here to tell you it’s not hard at all (especially when Kev does most of the work, lol!!)  It’s a lot of fun and the kids enjoy helping too.  I would highly recommend it.  Oh, and we’ve only had a garden the past 4 years.  We’re just learning as we go.  Love it.

Later on, I made a yummy salad with Green Leaf lettuce and spinach from the garden.

Our tomatoes are just starting to turn red.  I can’t wait until they are ready.  I did manage to find one lonely little orange Sunsweet cherry tomato though. 😉  Yay.

This salad included cucumber, orange peppers, blueberries, pecans, feta cheese and one little tomato.  I topped it with a little Newman’s Own Lite Balsamic Vinaigrette.

I’ve been “picking” lettuce for a week or two and I love it!  It’s so so good and it motivates me to eat more salad, which I love!

Yesterday, I went out and “picked” our first batch of spinach.  I was so excited!

I quickly decided to turn it into a protein shake.

Yay!  This shake included 1 C. Unsweetened Almond Milk, 1 scoop Vanilla Protein Powder, 1/3 C. Fat Free Cottage Cheese, 1 T. Sugar-free Pistachio Pudding mix, 2 big handfuls of spinach, a drop of two of Peppermint Extract and 6-7 ice cubes.

Loved it.  Super refreshing.

I’ve had so much fun eating our garden!!  I’m going to try to eat 1-2 salads and a protein shake every day.

It’s supposed to be 100+ degrees here in Utah the next few days.  Yikes!  I think I’ll be taking the kids to the splash park in a minute.
