K, I know my last post was sort of “ramble-esque!” I hope it even made sense. It’s hard to convey my thoughts as well as I would like to sometimes.

So, a while back I discovered these “healthy” cake thingys and I couldn’t believe something like that could actually exist!
I told everyone (even those who couldn’t care less) about it and I was so excited!

There are several different versions of these floating around the internet. I tried and tweaked a few and I think this recipe is best…
Healthy Microwave Cake in a Cup
- 2 Egg Whites
- 1/4 cup Canned Pumpkin or Unsweetened Applesauce
- 2 Tablespoons Healthy Flour (Almond, Spelt, Coconut, Oat, Whole Wheat, etc.)
- 1/4 teaspoon Baking Powder
- 4-6 packets Stevia (2-3 teaspoons)
- 1 Tablespoon Cocoa powder
- 1 teaspoon Water
- 1 Tablespoon Dark Chocolate Chips (optional)
Mix all ingredients in a microwave safe mug or bowl.
Use a fork and make sure you mix it very well (you don’t want chunks of egg or pumpkin in there.)
Microwave for 2 to 2 1/2 minutes until done.
Loosen the “cake” with a knife and put it on a plate or in a bowl
Eat it just like that or add lite Cool Whip (Reddi Whip in the can is better for you–no hydrogenated oils), peanut butter, yogurt, fruit or anything else you would like to top it with!
Enjoy!
It doesn’t taste just like your favorite chocolate cake, but it does feel indulgent!
It is making “staying on the wagon” so much easier for me!! Ya-hoo!
Oh, and the way I made it is about 275 calories. It is huge and filling too…that is why I had it for LUNCH! If you make it without chocolate chips, strawberries, or Cool Whip, it saves you 150 calories! Freak!

Last night I was thinking about what to make for dinner. I knew we were going to have a busy night and didn’t have much time, but I wanted to make something healthy.
So, we just made Hoagie Sandwiches and all of my kids loved them! Who knew???
Easy, healthy, fast, kid-friendly=my kind of meal!
I just prepared a bunch of healthy sandwich toppings and let everyone pick what they wanted
I love love love Hormel’s Natural Choice deli meats. No preservativs, nitrates/nitrites, MSG, etc. Everything on the ingredients list is real. Yay. I also love Swiss Cheese (adds 70 calories per slice, but worth it I think.)
Kev and the kids just put their sandwiches on Hoagie rolls, but I put mine on this healthy tortilla. I love these things!
I made a fruit salad to go on the side…peaches, strawberries and blueberries. Yum!

This was a very yummy lite summer dinner.
Oh, and Kev and I went on a run last night. I am happy to report that it felt great!! Yay! I was nervous because of how bad I bonked on my last run. I felt like I had to prove something to myself. I really pushed it and didn’t let myself be wussy. We only ran 5 miles, but we averaged a 8:39 pace, which is good for me! Yay!
