First off, I love these protein bars! They are yummy, homemade, chocolatey goodness.
I made them a couple weeks ago, and they smelled so good while they were baking! In fact, each of my 3 big kids wandered into the kitchen at separate times and asked what the yummy smell was. When I told them Chocolate Protein Bars, they weren’t as excited. It just makes more for me, I guess! 😉
Secondly, I really like Jamie Eason.
She is gorgeous, super fit, spiritual and seems really down to earth. I will warn you though, she’s a little lottle scantily clad in some of her pics, but I know that it’s just her job (fitness model), so I still love her. She is motivational to me.

Note: I made just a few changes. I used chocolate protein powder instead of vanilla, I used apple/blueberry baby food, and I made my own oat flour. She says in the video that if you make your own oat flour, you should double it since it’s not as fine. It did this. If you want to know how to make oat flour, click here.
Chocolate Protein Bars
- 1 cup Oat Flour
- 4 Egg Whites
- 2 scoops Vanilla Whey Protein Powder
- ½ cup Splenda, Truvia, or Ideal
- ½ tsp Baking Soda
- ¼ tsp Salt
- 8oz Berry flavored Baby Food
- 3 tbsp Baking Cocoa
- 4oz Water
Directions:
- Preheat oven to 350 degrees.
- Mix dry ingredients (oat flour, protein, baking soda, salt, baking cocoa) together in a large bowl.
- Mix wet ingredients (egg whites, Splenda, baby food, water) together in a medium sized bowl.
- Add wet ingredients to dry ingredients and mix together.
- Spray cooking dish with cooking spray and add batter to the dish.
Bake 20-30 minutes in oven.
Makes 16 squares, serving size=2 squares.
Nutritional Info: (I calculated this myself, but for some reason my calculations are higher than what’s listed on her website) This is for 1 serving (2 squares):
Calories: 127, Fat: 1.5 g., Carbs: 16 g., Fiber: 2 g., Protein: 12 g., Sugar: 3 g.
After these were cool, I cut them into 16 squares, wrapped single servings (2 squares) into wax paper and then put them all into a freezer bag and put them in the freezer!
I have loved having these available to take with me on the go. They are so moist and yummy! I love this recipe!
One day I even topped them with a little peanut butter and had them with a side of leftover fruit.
