Leftovers and a Run with Jim

Hey guys.  I hope you are all having a wonderful Thursday!

I had a really crazy week last week, so I’ve been trying to calm down and get back into my normal healthy groove.  Yay.

I always love starting off my day with a yummy, healthy breakfast.  I had these yummy chocolate protein pancakes this morning…

Protein Pancakes

I had a bunch of them in the freezer, so I just popped these in the toaster.  Super easy and super yum.  I topped them with a light smear of natural peanut butter, strawberries and sugar-free syrup.

I had this for breakfast yesterday…

Oatmeal and an orange

1/3 cup oatmeal mixed with 1/2 tablespoon stevia, 1 tablespoon peanut butter and cinnamon!  Yum.  I also had an orange on the side.

This was one of my staple breakfasts on the “Lose 10 Pounds in 10 Days” plan and I loved it.  However, on that plan I only had a 1/4 cup oatmeal and no peanut butter.  I spruced it up a little this time and it was wonderful!

I had this for lunch today…

Yummy egg scramble

An egg white veggie scramble.  I love this meal because it’s an easy way to pack in (and use up!) a bunch of veggies!

This one included 1 whole egg, 4 egg whites, celery, red pepper, onion, spinach, chopped ham, tomatoes, salsa and CHEESE.  I really love it when I top my egg stuff with cheese.  Sometimes I skip it to save on calories, but it always tastes SO GOOD when I use it.  Yum!

I had this for lunch yesterday…

Salad with Chicken

Leftover grilled chicken and leftover salad topped with a little Briannas Poppy Seed Dressing.  So yummy!

For some reason, we have a TON of leftovers right now.  We made a ton of food over the holiday weekend, so I’ve been trying to use it all up the past couple of days.  I hate wasting food.

In fact, I’m trying to figure out how to use all this stuff for dinner tonight…

Eggs, roast and avocados

Leftover pot roast, hard boiled eggs and some avocados that are about to die.  I think I’ll make the kids some roast sandwiches (in leftover hot dog buns!), deviled eggs and chips with guacamole.

Sounds good.

I think I’ll make me a giant salad using all this stuff.

Sounds good too. 😉

Here’s what I had for dinner last night…

apples cheese and popcorn

An apple, string cheese and some yummy caramel/cheese corn (from Costco.)

Ya.  Very freaky.  We had a CrAzY night last night, so I just fixed the kids sandwiches and I grabbed this for me as I ran out the door to take my 5 year old to soccer practice and then go to my 14 year old’s Scout Court of Honor.

This was actually pretty tasty.  My 3 year old shared it with me while we sat at soccer practice.

I also went on a very fun run yesterday.  I decided to take my sweet little puppy dog, Jimmer along this time…

Look at that cute little duffer!  I love him.

He actually did pretty well on the run too.  I’ve taken him on a lot of walks and very short runs, but I’d never taken him on a “real” run before.

I took him on a one mile loop to see how he would do and he did GREAT!  Soooo, I decided to take him with me for the long haul.  We ended up going 4 1/2 miles and he loved every minute of it!

He did really well for about 2 miles and then he kind of just fast walked (while I slow jogged) the rest of it.  I was a little worried I was wearing him out too much, so at one point I actually picked him up and ran WITH him.

Too funny.  I wish I could have taken a picture to share.

I think I’ll take him with me again, but I’ll probably only let him run about 2 miles or so.  He’s just such a sweet little guy…I don’t want to wear out his cute little legs.

Well, that’s all for now!  I’m actually getting ready to head out to one of my favorite “Muscle Works” classes at the gym in a sec.  Sooo, I gotta jam.  I love y’all!
