Lots of Yummy Healthy Food and a Day at the Park!

Well, so far I’ve been lovin’ my ULTRA healthy diet.  It’s been tough, but I know it’s so good for me. 😉

Whenever I decide to kick my diet up a notch, one of the first things I notice is how often I want to snack!!  Man.  AND, the snacks I usually want to grab aren’t necessarily the healthy ones (unhealthy carbs and processed foods.)

Those types of foods are just so easy to eat, are very satisfying and are too dang yummy!

It’s not quite as tempting to snack when my choices are fruit, veggies, yogurt, nuts, etc.  It definitely helps me to decipher if I’m really hungry or just “snacky” though.

It’s been an eye opener to me.

On Monday night, we had a small party at our house with a bunch of cute teenagers.  It was so fun, but we had pizza, candy, soda and donuts!

Ya.

Everything looked and smelled wonderful!  Fresh pizza=heaven….or torture depending on how you look at it. 🙂  Of course, I stuck to my guns though.  I made myself a big salad instead.

This obviously didn’t fill me up for long, so after the party I heated up some leftovers from Sunday’s dinner (brown rice, chicken and broccoli.)

It tasted great and was very satisfying.

Yesterday, I decided to go to my crazy class at the gym again.  It was great.  We did a BUNCH of deadlifts and I can barely walk today.  Awesome.  We also killed the back, biceps and triceps.  I’m definitely feelin’ it.  Yay.

Before I left to the gym, I made myself a bowl of Chocolate Peanut Butter Oatmeal to eat on the way there.  It tasted so good to me!

This time I decided to drizzle the peanut butter on top instead of mixing it in.  I realized that when I mix it in, I can’t taste it as much.  This definitely made it taste more peanut buttery and I loved it.

I figure, If I’m using up 100 calories on Peanut Butter, I better enjoy it!

When I got back from the gym, I made this for lunch…

Breakfast Burrito with tomatoes

A Breakfast (er, lunch) Burrito with 1 egg, 3 egg whites, peppers, green onions, spinach, avocado and olives topped with ketchup and wrapped in a small La Tortilla Factory tortilla.  I also had some grape tomatoes on the side.  YUM!  I’ve been having this a lot lately.

Oh, and I’ve been cutting up a bunch of peppers, onions and olives (and other veggies) and putting them in this handy dandy container lately…

Salad and egg fixins

It makes eggs, Breakfast Burritos and salads a snap.  I always throw spinach in everything too.

This has also been one of my favorite snacks lately…

Cottage cheese, banana and PB

3/4 cup low-fat cottage cheese with a sliced banana on top and some natural peanut butter drizzled (or more like plopped) on top.  It is wonderful!

I’ve also been loving protein shakes lately as well.  I decided to run over to the park the other day with some of my boys and I took a protein shake with me.  It was perfect!

It’s been kind of cold here lately and I’ve told my kids that the “nice weather days” are numbered.  Soooo, when it was nice and sunny the other day, we decided to head to the park.  It was beautiful!

We took Jimmer (the dog) with us as well.

It was just my typical Chocolate Milkshake Protein Shake.  Loved it.

Afterward, the kids wanted to walk across the pedestrian bridge nearby too.

It was fun and I’m glad we “seized the day” because I don’t know how many good weather days are left!

My cute 3 year old wanted to have leftover pizza for lunch today.  He was disappointed there weren’t any olives on his pizza, so I opened up a can of olives and put some in a bowl for him to eat on the side.  He ended up biting a bunch of them into “slices” and putting them on his pizza.  Too cute!

    Your son really looks like he’s on the mend. What a trooper he is! I’ll have to try a breakfast burrito this weekend. I find with salads that I have to add protein, like cheese or chicken with some pieces of avacado or I am not satisfied. I agree, enjoy the nice days while they last.

    All that food is making me hungry! Especially peanut butter chocolate oatmeal. I love protein shakes as well, I start my day off every morning with one. I feel like something is off without one!
