I’m happy to say that my sweet friend was able to fix my computer; in fact he made it even better! Hallelujah! I don’t have it back yet (I’m still on the kids computer!), but I’m looking forward to using it again. Yay, yay, yay.

Well, I went to a great class at the gym last night. It’s a wonderful muscle class and I’m definitely feelin’ it today.
We had a crazy hectic night last night, so I threw some chicken in the Crock Pot and some potatoes/sweet potatoes in the oven. It was a very simple and easy meal, but everything turned out fabulous!
I’ve been experimenting with basic “Chicken in the Crock Pot” a lot lately and I think I finally got it right. It’s such a wonderful recipe because it tastes good all by itself, but it’s also perfect as an ingredient in other recipes. It definitely simplifies things for several meals. I’m sure I’ll be making it all the time now. 😉

On Monday night, I made breakfast for dinner. It tasted SO GOOD to me! I really don’t make fancy breakfasts very often, so we do breakfast for dinner quite often.
I made French Toast for the kids (using Kev’s mom’s homemade white bread) I also made some turkey bacon and scrambled eggs. Oh, and we also used our nice fine china, lol!
I popped two chocolate protein pancakes in the toaster for me and I had it along with some turkey bacon and eggs (1 whole egg + 3 egg whites.)
I love this meal and could seriously eat it every day for breakfast and dinner!

Well, yesterday I told you guys how to make Dried Pears. So, today I’m going to tell you all about pear leather.
Oh my gosh guys, it is SO good! I love, love, love dried pears, but I love pear leather even more! It’s a little bit more time consuming, but it’s still really easy to make!
You will need:
- 4 cups pureed pears (about 8-9 medium pears)
- 1/2 teaspoon lemon juice
- a vegetable peeler
- a sharp knife
- a food processor, blender or mixer
- a dehydrator
First, you need to wash and peel your pears. I used an apple corer to core them and a vegetable peeler to peel them (you can just use a knife to cute them in half and core them too.) Make sure to cut out any brown spots.
Put the cored and peeled pears into a food processor (or mixer of your choice) and puree them.
Add lemon juice to pureed pears and mix throughout.
Spray a dehydrator fruit leather tray with cooking spray.
Pour pureed fruit onto dehydrator tray. It should be about 1/4″-3/8″ thick and evenly spread.
Set the dehydrator to 135 degrees and dry until the fruit it pliable and “leather-like.” Make sure there are not wet or overly sticky spots.
It should usually take about 6-8 hours to dry, but mine took about 10 because I made it a little thick.
Note: I’ve learned that I would rather have my fruit leather too thick instead of too thin. If it’s too thin and brittle, it’s just not as yummy.
In this picture, the leather is still not completely done. You can see that it is darker (still wet) near the center. My leather also split a little (I don’t know why), but it was still great!
When the leather is done, cut it into individual pieces and wrap in plastic wrap or wax paper. Keep the fruit leather in an air-tight container.
They should stay good several weeks (longer if you freeze them!), but they are usually gone within a week at our house!

I love my dehydrator and use it every year. They can run anywhere from $30-$100+. The one I have typically costs around $50, but we got it on sale for $35-$40 several years ago. We bought it at a little “Ma and Pop shop” in the small town where my husband is from, but I would recommend checking Ebay or Amazon. Walmart and Target might have them too.
