Happy Wednesday! I started my morning off with a delicious breakfast that I LOVED!
Two fried eggs topped with avocado and a little cheese with a side of buttered toast. YUUU-MMMMY!
This breakfast took me just a few minutes to make and it kept me full for quite a while. Oh and Kev found this bread at Costco and it is the best toast bread ever!
It’s made by Aspen Mills, which is a local Utah company. It seriously tastes just like homemade. I’m also lovin’ the ingredients….100% Stoneground Whole Wheat Flour, Water, Honey, Salt, Yeast.
That’s it. Yes, it pretty much is just like homemade. Score.
I also had a yummy lunch today…
My kids requested Tuna Fish sandwiches for lunch, so I made this for me! It’s just an open-faced Tuna Fish sandwich (tuna, pickles and a little Olive Oil mayo) with lettuce. I also had some frozen grapes on the side. I love frozen grapes in the summer, btw. They taste just like little popsicles and are so refreshing!

I recently received a fun “Snack a Little Bigger™ Back-to-School package” from Mini Babybel cheese. Yes, I can’t believe that Back-to-School time is just around the corner!
It included Mini Babybel cheeses in various flavors, a fun Babybel lunchbox, a copy of the book, Weelicious Lunches by Catherine McCord and a giftcard to purchase some of our favorite lunch foods.
The book is full of a TON of great (and easy!) lunchbox ideas and healthy meal/snack ideas in general. It’s great. My kids also get so excited whenever we get Babybel in the mail!
I love Mini Babybel cheeses because they’re such an easy, portable, fun and delicious snack. I also love that each cheese is 100% natural, has 5-6 grams of protein and is only 80 calories or less. Love.
Sooooo, today I gathered all the kids together and had them help me come up with a bunch of yummy, healthy lunchbox options!
We made some fun “Sandwiches on a Stick,” which is basically just a sandwich kabob. We got the idea from the Weelicious Lunches book. You just take a skewer and put various sandwich stuff on it (bread chunks, deli meat, cheese, pickles, bell peppers, tomatoes, cucumbers, etc.)
We used Pretzel bread (from Costco), Babybel cheese chunks, Turkey and pickles. My kids loved them!
Along with the Sandwiches on a Stick, we also made little Peanut Butter and Jelly or Honey sandwiches (the kids love it when I cut them into small “baby” pieces), carrots, yogurt (we love Go-Gurt Simple or Chobani), hard-boiled eggs, raspberries, apples, grapes, popcorn (we love Skinny Pop!), and Babybel cheese and turkey by themselves (not on a kabob.)

These were actually pretty quick and easy to throw together. AND, after making all of this delicious food, we decided to call it “dinner” for tonight. The kids loved it.
I’m all about simple, easy to make, YUMMY, healthy food! Yay.

I LOVE those cute lunch ideas! Plus it looks like a lot more fun to get the kids involved in creating their own special lunches instead of leaving poor mom with a lunch-making assembly line by herself.

I buy the mini babybel light in bulk at Costco. Love them with some fruit for my after school snack.
