I hope you all had a wonderful Mother’s Day!
Ya know, I really love Mother’s Day. I love that it’s on a Sunday and I love that it’s in May. Sundays are such a nice relaxing family day already and May is the most beautiful, happy time of year!
I also love that my kidlets are so sweet and on their best behavior and I love that I have a good reason to relax, kick my feet up and just spend a beautiful day with the ones I love. <3
It’s so nice.
We were able to go up to my mom’s house and have dinner with the fam. Kev snapped a few pictures of my mom, sister and I….and then my brother decided to photobomb! Ha ha!
I just have to tell you guys that my mother is the sweetest lady on the planet. I’m serious, y’all. She is a saint. She is so kind to everyone, never says a negative thing ever and is always happy. I’ve never in my life ever heard her raise her voice either!
To know her is to love her and I feel so blessed to call her my momma. I also feel so blessed to have two wonderful sisters, an incredible mother-in-law and so many beautiful sister-in-laws, nieces and friends.

These peeps are my world, folks. I love them with all of my heart! It is rare to have all of my kids together at the same time these days, so I was grateful we remembered to take a picture!
I’m so grateful, blessed and humbled to be a mother. It is BY FAR the hardest thing I’ve ever done, but also BY FAR the most rewarding and fulfilling!

Well my friends, I have a very fun, yummy, life-changing recipe to share with y’all today!
Last year, I was introduced to Mighty Muffins, made by FlapJacked.
They are beautiful little single serve muffin mixes (I bought mine at Walmart) that are made from healthy ingredients and are high in protein (20 grams.) You just add water, mix it up and cook it in the microwave for about 45 seconds.
I was stoked to discover these! I tried several of the flavors (all the ones with chocolate in them, hee hee.) Sadly, I didn’t love, love, love them. They are good, I love the nutrition and macro make up, but for some odd reason they gave me a stomach ache?
I have like zero food sensitivities too, so I thought it was weird that I felt sick after eating them? I would still highly recommend them because I know SO MANY people love them, but I just couldn’t get them to work for me!
I was intrigued by the easy, quick muffin in a cup thang though, so I searched the web for copycat recipes. I found very few (like one.) There are a zillion cake/brownie/muffin in a cup recipes out there though, so I tried several of those.
I never found a recipe that I absolutely loved, so I messed around with a couple of the recipes I found and finally came up with a version that I love!
Soooo, I’m sharing that recipe with y’all today! Woot! This recipe takes just a couple minutes to throw together, cooks up in about a minute, is made from healthy ingredients and tastes awesome!
Mighty Muffin Copycat Chocolate Protein Muffin Recipe
Ingredients:
- 1 Scoop Chocolate Protein Powder (~34 grams)
- 1 Tablespoon Coconut Flour (8 grams)
- 2 Tablespoons Unsweetened Cocoa Powder (10 grams)
- 1 Tablespoon sweetener (I used Swerve Granular Sweetener)*
- 1/4 teaspoon baking powder
- 1 egg
- 1/4 Cup milk of choice (I used unsweetened Cashew milk)
- splash of vanilla extract
- Chocolate chips (optional)
*Note: You may need to add a little more sweetener if your protein powder isn’t very sweet.
In a small bowl, mix protein powder, coconut flour, cocoa powder, sweetener and baking powder with a fork.
In a separate bowl, mix the egg, milk and vanilla very well with a fork.
Pour the wet ingredients into the bowl of dry ingredients and mix very well with a fork until well combined and no dry spots are remaining.
Microwave for 60-80 seconds. It should still look a little bit wet on top. If you cook it until it’s all dry….it will be too dry!
It might seem a little freaky to eat it when it’s still a little wet (and jiggly!), but TRUST ME! It’s really, really good, decadent and yummy that way! It reminds me of a molten chocolate cake!
Take the muffin out of the microwave and immediately top it with chocolate chips if you prefer. I recommend adding the chocolate chips after it’s cooked (instead of before) because otherwise they just melt in the muffin and you don’t even notice they’re in there!
If you’re going to add the extra calories with the chocolate chips, you want to make sure it’s worth it and you notice them!
You can also top it with a little whipped topping if you’d like!
You can also skip the chocolate chips and top it with a dollop of natural peanut butter instead. Holy yum! It melts right in and is oh so good!
I hope you all enjoy this recipe! It’s the perfect thing when a sweets craving hits, or as a snack in the late afternoon, just before bed or post workout. Heck, you could have it for breakfast too! Basically, it’s the perfect treat anytime.
Oh, and another cool thing about this muffin? You can premix all of the dry ingredients and store it in a Ziploc baggie. When you want to eat it, just add an egg, 1/4 milk and a splash of vanilla, cook it for about a minute and VOILA, a perfectly tasty, healthy treat!
How do the macros compare with the original Mighty Muffin made by FlapJacked?
Original Mighty Muffin: 220 calories, 8 F, 21 C, 20 P
My Copycat Recipe: 289 calories, 10 F, 27 C, 36 P
So, my recipe’s macros are a little higher, BUT the recipe is HUGE! It’s much bigger than the original Mighty Muffin. It will FILL YOU UP!
