I love breakfast SO much! I have so many yummy recipes I actually crave and look forward to eating each morning.
About 99.9% of the time, my breakfast consists of one of three things;
- Eggs
- Protein pancakes
- Oatmeal
That’s it.
BUT, I have so many variations of these three basic things, that I never get tired of them! I’ve shared a lot of my recipes with y’all already, but there are several more I haven’t shared yet! Soooo, I thought I would share!
Eggs
I usually eat eggs scrambled (1 whole egg + 3 egg whites) topped with a little salsa or low-sugar ketcup (yum!), or as an omelet chock full of veggies.
If I have leftover quinoa, I love to make a quinoa veggie scramble! Yum.
Kev is the best omelet maker on the planet, so whenever he offers to make me one, I never refuse!
Kev made us both omelets yesterday morning since it was President’s Day and he was home, yay.
He didn’t do the traditional “fold it in half” thingy, but it tasted the same! Isn’t it pretty?? I think he put peppers, olives, celery, green onion and turkey in there. We didn’t use any cheese and I didn’t miss it all all. This was super yum.
Here are a couple more of my “egg creations” I’ve been enjoying lately…
An “Alternative English Muffin” topped with scrambled eggs (1 whole egg + 3 egg whites) and served with a yummy green smoothie on the side.
I really love these “Alternative English Muffins” so much. They are still made from “enriched flour”, but they are high in protein and fiber and have almost no sugar. They are also only 100 calories for a whole one. Love it.
I also made this creation the other day. Eggs served with leftover roasted veggies. Delish!
Protein Pancakes
I love protein pancakes SO much! It makes me feel like I’m having a treat for breakfast. I have four different protein pancake recipes that I use all the time and I love them ALL!
The only bad thing about protein pancakes is I have make them in the blender, so I can’t make very many at a time (6-7 pancakes, max.) If I have time, I love to make two batches and freeze the leftovers for later. I love being able to pull a couple protein pancakes out of the freezer and pop them in the toaster. It makes breakfast super slick…and yummy!
Here’s what I had for breakfast this morning…
We bought a bunch of yummy fruit at Costco last night (their produce is the best in the entire world!), so I was so excited to eat it all this morning! This seriously tasted like Strawberry Shortcake. Delicious!
I used my Protein Packed Pancake recipe and topped them with strawberries, bananas, blueberries and a drizzle of agave nectar. I served them with a side of scrambled eggs (1 whole egg + 3 egg whites). This was so yummy and so filling!
Here’s another look…
My other favorite protein pancakes are; chocolate, coconut chia seed and pumpkin. They are all so good! My kids love them too!
Oatmeal
I have been on a serious oatmeal kick lately. I’ve had it almost every morning for the past three weeks or so! I love it because it’s so quick to make, yummy, warm, “comforty” and filling!
I have my chocolate peanut butter oatmeal all the time!
I also love cinnamon raisin oatmeal and apple cinnamon oatmeal,
BUT, my new favorite one is….
CHOCOLATE CHIP COOKIE OATMEAL!!
Oh my goodness, it’s so yummy!

I LOVE all of those. My all time favorite though is my oatmeal souffle…so filling and delicious! I make protein pancakes all the time for an afternoon snack! LOVE!

A lot of good-looking breakfasts there! I don’t usually have the time for that unless I’m off work so for me it’s almost always Greek yogurt with blueberries, cashews, and granola. I will have to give some these a try though.

Yum, I love Greek yogurt wirh all those things mixed in! My husband keeps a container of oatmeal at work and makes some when he gets there. I think he keeps some protein powder, flax and other things at work too. I know it really simplifies his breakfast process. 😉

Lots of great ideas! I either have a Shakeology, but we do eggs a lot. I have some quinoa left over. Need to try it with eggs. And anything with chocolate chips should be good

Thanks so much Tracey! My green smoothies usually just consist of whatever I have on hand at the moment. My typical “go-to” green smoothie is 1 1/2 C. unsweetened almond milk, 1 C. frozen fruit (berries, peaches, mangoes, etc.), 1/2 cucumber, 2 big handfuls spinach, 1 T. Stevia in the Raw and a splash of vanilla or almond extract. That’s about it. I love it because it’s easy, yummy and super low-cal (about 150 calories) with loads of nutrition. Enjoy!

Will do! I just started drinking green smoothies recently. I’ve done protein shakes for years, but just got into green smoothies. I’ll add this recipe and will definitely work on building up the recipe section for green smoothies in general. They are so yummy and healthy! 😉
